Billy's Favorite Smoky Collard Greens

this was more like soup, although the flavor of the collards greens was good. This was my first attempt at collards and would not make this one again - try a different recipe.

Makeover Morning Glory Muffins

I'll start off by saying that I made this with modifications and it was missing something. I did not use the oil and substitued the orange juice for apple juice and it was a little bland. Next time I will double the apples and raisins and maybe even use pumpkin puree like another review mentioned. My husband loved these and didn't think it was missing anything, so who knows!

Butternut Squash Soup II

I will make this again and again. But next time I will not saute the veggie in butter, I think that was a waste of time and calories from the butter. Also I cut off the peel of the raw squash and cubed it b/c I didn't read the reviews of others first. So next time I'll try cooking it first and adding some seasoning. But over all i loved this soup.

My Big Fat Greek Omelet

My egg mixture was very thick so it was more like scrambled eggs instead of an omelet as tilting the pan tech did not work. I omitted all the salt as I usually do in every recipe and I could not tell that it was missed. I will definitely serve this again and again.

Chicken, Asparagus, and Mushroom Skillet

I found the asparagus not cooked enough with that alloted time and it was still really dry. Although I do not believe this was suppose to be a recipe that yielded a sauce base. Also do not try to make the chicken and a whole breast, I did and that burned the seasoning. The mushrooms saved the day.

Spicy Steamed Shrimp

I would suggest to use peeled shrimp in this recipe as all the flavoring stuck to the shells as you peeled them. Will def use this recipe again.

Orzo with Parmesan and Basil

i used dried basil and it was way too overpowering. I felt like i was eating straight basil. Next time will do with a little fresh and hopefully the flavor won't be so much.

Spinach Quiche

very good and very easy. i used 1/2 the butter that the recipe called for and next time i make it i will use 1/4 as it was still very buttery. You just need enough butter to brown the onions. Definitely making this again.
