I love to cook tasty, healthy food. I really love to make egg scrambles, soups and stews:)
My favorite family cooking traditions
Every Christmas morning and special occasion breakfast I make the most wonderful Victorian Baked Caramel French Toast.
My cooking triumphs
I love trying things in restaurants and then going home and finding a similar recipe and doctoring it up! My favorite is Caldillo Soup that I had at a fabulous Mexican restaurant in Las Cruces, NM called La Posta. I found a few recipes online that seemed to have similar ingredients as the restaurant, tweaked them a bit and made it my own and it is a staple recipe in our household now! Muy bueno!
My cooking tragedies
Had to break into the pressure cooker in order to get it opened! I incorrectly set the lid on top of the pot what I thought would just be for a few seconds, and the stove was set to simmer. The lid sealed and there was no possible way to get to our dinner except by breaking into it! The food was delicious though, but now we are out a $100 Fagor Pressure Cooker:(

Simple Carnitas
This was really easy and delicious! I would probably use less salt next time, however. It makes a lot...great for burritos as well.

Yummy Roll Ups
This is a quick and easy appetizer to whip out, however I think the measurements are off. I was able to us 12 slices of ham and a whole 24 oz. jar of sliced dill pickles along with 1 8 oz pkg of cream cheese. I cut the rollups into 3rds, stuck a olive on top and pierced with a toothpick and it was enough for 10-12 people!
