The Best Rolled Sugar Cookies

This is a great recipe!! The cookies are tender yet crispy on the bottom. I like to add a little extra flavor by increasing the amount of vanilla (its very important to use pure vanilla extract). Another tip is to use really good sheet pans, its a great investment to buy good quality nonstick heavy duty half sheet pans (not expensive at all). Something that works great for me is to put the prepared sheet with the raw cookies already cut in the fridge for a few minutes before baking them, it really helps to keep the shape, specially if the cookie cutter has a lot of details. Finally, this recipe yields to make a lot of cookies, so often times if I want to make fewer (like 2-3 dozens depending on size), I make half the recipe.

Lemon Yogurt Pound Cake with Lemon Glaze

I have made this pound cake several times, and Its great!! It lacks a little bit of lemon flavor, so I have added a teaspoon or so of lemon extract to the cake batter and it turns out great. Otherwise I'll follow the recipe as is. The best thing about this cake is the lemon glaze, so make sure to use fresh lemons.

Libby's® Pumpkin Roll with Cream Cheese Filling

It was delicious!! The only suggestion is to chop the nuts very well because larger nuts can lead to breaking the roll

Grandma's Lemon Meringue Pie

This was a great recipe!! My family really liked it. The only changes I made was to substitute water for milk, and increase the lemon juice to 1/2 cup. Give this a try...it's really easy!!

Pineapple Pie III

I have to be honest, I am not a big pineapple pie lover, but everyone in my family is, so I gave this recipe a try and it came out great!!! The only change I made was substitute fresh pineapple (3 cups with its juice) instead of canned. The result was amazing, since the pineapple that I used was so ripe and sweet, the lemon juice gave it a nice balance!!!

A-Number-1 Banana Cake
