Roasted Okra

Mercy me, these were delicious. I cut a few okra up, splashed a little olive oil in the bowl, sprinkled a little seasoning salt on them, tossed and spread in a pan along side sliced zucchini. I rarely fry foods, so this was a terrific substitute for fried okra. Keep in mind that the longer you cook it, the smaller it shrinks, so what you think will serve four could end up being barely enough for 2.

Snickerdoodles V

I made these snickerdoodles because they used shortening and I didn't have time to soften butter. These are certainly very good cookies. I used my smallest scoop and got 5 dozen cookies that were about 2.5 inches across. They were lovely, small cookies. This was an easy recipe and very much worth making again. I increased the sugar-cinnamon to accommodate more cookies, adding a little extra cinnamon to ensure the color and taste contrast.

Raspberry Vinaigrette

I halved the recipe for one bag of spring mix and it was more than enough. It would have been plenty for 2 bags of mix. The one bag divided out perfectly for 6 people. Served this as a bed for Moroccon Salmon cakes, where I wanted a simple, basic salad that wouldn't compete with the salmon cake. I probably used a full teaspoon of dijon for 1/2 the recipe. This dressing was simple and not overwhelming, just what I wanted.

Oven Roasted Red Potatoes

These were really tasty. Certainly worth making again. Used the leftover onion soup mix from "My Meatloaf" recipe to make these as a side along with leftover meat loaf sandwiches. The combo made for a lovely weekend lunch.

Gingerbread Biscotti

I tried a test batch of these for my xmas gift boxes. I think they're a winner. I made them as the recipe called except for adding a little more flour until it came together in my mixer. I also needed to cook them longer than specified. The taste was gingery, but not overwhelming. Be sure to wet your hands while forming the logs, it solves the sticking problem. I'll be drinking hot tea tonight with my first successful batch of biscotti.

My Meatloaf

This was excellent meatloaf. It caramelized beautifully. I cooked it on the next to bottom rack of my oven for only about 45 minutes. Quite good. I used two ends and one slice of bread and chopped them into 1/4 inch dice. I spread ketchup over the surface in a thin layer with a brush and I think that made a huge difference in the crust of the meatloaf. This will be my new go-to meatloaf recipe.

Lemon Butter Chicken

This recipe was so good. The only change I made to it was to add crushed red pepper flakes for a little heat. I was generous with the seasonings so the chicken had a lot of flavor. I served the chicken over a bed of wheat spaghetti and drizzled the sauce over both. A lovely recipe I plan to make often.

Pork Tenderloins with Roasted Potatoes

I made this just as the recipe specified. This was a basic, tasty dish. Not an exciting or particularly flavorful dish, but one that made for a good, easy weeknight meal. I will certainly make this dish again.

Baked Oatmeal II

Dang,these were good. I added walnuts and eliminated the cranberries - I'll try freezing the leftovers and taking them for breakfast. Good enough for company brunch. I hope to modify them into something a little healthier, but I always think it's only fair to try a recipe as close to the original as possible.

Campbell's® Creamy Dijon Chicken with Rice

Not an exciting dish, but a quick and easy dish. I keep baked chicken breasts in the freezer which turned this into a super quick dish. Not a dish I would serve to company, but I will make it again.

Very Special Spaghetti Sauce

When the sauce was newly made I didn't like the strong wine flavor. However, after 3 months in the freezer the flavors melded together just beautifully. This is a wonderful spaghetti sauce. I'll just plan to make it well in advance of using it. The flour turns the sauce into a beautful rich looking suace intead of a a brothy looking sauce. This is truly a very special spaghetti sauce.

Crisp Hash for Two

This technique just didn't work for me. There was no turning, but scraping what I could off the bottom of the pan. The taste was good, but presentation left a lot to be desired. When I try this again I'll only try it in a nonstick pan.

Mondi's Super Simple Chicken

I softened my butter and mixed the spices in it and spread under and over the skin. The chicken was moist and flavorful. An instant read thermometer would help those who had problems with dry chicken. I checked mine at 45 minutes and it read 138. In six minutes it read 160. Remember to let it rest a few minutes before cutting. This is not an exciting dish, but basic and tasty.

Beanie Wienies

I made this recipe after discovering that I didn't have chili for the hot dogs and buns that I had thawed. I halved this recipe and it made just the right amount for two. My husband seemed to enjoy them and said, "these are pretty good beanie weenies." Not an exciting dish, but was certainly easy to throw together. Sliced the hot dog buns open, sprayed with a butter spray and broiled for a minute. Not a bad lunch.

Quick and Easy Home Fries

These were really good. I used a hot and spicy garlic oil instead of the butter and it gave them just a little kick. I cooked much longer than the 10 minutes suggested after the lid was removed to get them really crispy. They were certainly good enough for company.

Rice-so-Nice

My husband loved this recipe. I didn't have any beef broth so I just added some granulated bouillon to some water. I do think the next time I made it that I'll add about 1/2 the butter. I also took the foil off and cooked it for about 15 minutes at the end to dry up some of the broth and crisp up some of the rice. This is certainly a recipe I'll make again.

My Country Style Steak

Absolutely the best cube steak I've ever made (maybe even eaten). The leftovers were frozen and they reheated beautifully in my convection oven. A winning recipe.

Chicken Pot Pie IX

This recipe makes a very good chicken pot pie. My only adjustment to this recipe is to combine the vegetable mixture and chicken together and then taste test. Add any seasonings which suit your family's taste buds. I added poultry seasoning, garlic powder and extra black pepper. This way the recipe can be adjusted to suit individual family preferences. To make it easier on myself I used frozen, mixed vegetables and also used leftover chicken from a previous dinner. I certainly do need to work on my pie pastry assembly skills. It wasn't the prettiest pot pie, but it was certainly the best I've every made.

Salmon with Tomatoes

My husband and I thoroughly enjoyed this dish. I didn't have fresh tomatoes so I used tomatoes with chilies and peppers which gave the dish quite a nice kick. We'll certainly be making this recipe again. If I use the spicy tomatoes again, I probably won't bother seasoning the salmon with the dill and paprika since those flavors got lost with the spicy tomatoes. I look forward to trying this with fresh tomatoes.

French Toast Fingers

A very kid friendly recipe. I needed to fix breakfast for my cousin's 3 children and only had 2 eggs. This recipe suited my needs perfectly. There were no complaints, only compliments.
