Hummus III

I halved the recipe (but kept the full amount of garlic!) and this came out excellent. Tweaked somewhat with the addition of red pepper flakes, and left off the paprika and parsley garnish. Also left off the olive oil on top, because, well, it seemed kind of weird and why add extra oil if you don't need it? All in all it was an lovely consistency and tasted fantastic!

Kathy's Award Winning Barbeque Sauce

Had I been able to access all of the ingredients listed, I believe this easily would have been a *5 star* recipe. Didn't have the tomato juice, used tomato puree instead, but I do not think that made much of a difference. Didn't use an actual onion, used onion powder. Didn't have the liquid smoke and I really think that's what would have "made" the recipe...it lacked that essential "smokiness" that characterises a good bbq sauce...so be forewarned potential sauce-makers -- have this liquid smoke stuff on hand! Otherwise, it was pretty tasty, but I can't wait to try it again, the "right" way.

Grandma Johnson's Scones

AMAZING! I never knew that I actually *liked* scones...all I had tasted before were the dried out, tasteless versions for sale at various "insert famous name here" bookstore cafes. But THESE...these were flaky, buttery, subtly sweet and incredibly delicious. I did not have raisins, so I substituted cranberries, but that was the only thing I changed. Next time I made add some orange zest and make a "cranberry -orange" variation...maybe even a "lemon-poppyseed" combo too. Oh, lest I forget...I served this warm with "mock clotted cream" and blackberry jam. Incredible!

Moroccan Tagine

Although my version is so far removed from the original that it is probably unrecognisable...I still think this would have been a great recipe. It was certainly great to build upon! I omitted the chicken, added some cubed new potatoes, green pepper, and dried apricots, I used honey instead of sugar, lime instead of lemon, canned pumpkin puree instead of the squash and I also added some ginger and a hefty sprinkling of cinnamon. Sounds like a mess, right? Nope! It was excellent on top of some olive oil and roasted garlic couscous and will make fabulous leftovers. Thanks for this recipes to use as a base!

Three Cheese Garlic Scalloped Potatoes

This is THE YUM! I had to make do w/ the cheeses, since I did not have provolone, and instead of the cream I had to use evaporated milk, but all in all it was quite delicious and complemented the pork chops I served with it quite nicely. The only thing I did not care for is how the cheese got all curdly between the layers and how the top got a little greasy. Maybe something I did wrong, or the make-shift ingredients I used?

Downeast Maine Pumpkin Bread

I always make these to give as gifts in the Autumn, it is really a lovely recipes. I modify it a bit, making it half brown/half white sugar, I used half oil/half apple sauce, a few extra tsp. of cinnamon and the addition of golden raisins, dried cranberries and chopped walnuts. When baked in mini loaf pans these look so yummy and cute!

Mock Tuna Salad

This stuff is awesome, I do not think I would change a thing except to add some salt or pepper or maybe even a pinch of curry powder for extra kick. Makes an awesome "tuna" melt w/ cheddar cheese on whole wheat bread!
