Turkey and Quinoa Meatloaf

This was easy, delicious, and probably the healthiest meatloaf I've ever made! I don't think I ever made a meatloaf without having to use breadcrumbs before this, and I liked the texture of the quinoa.

Iced Pumpkin Cookies

No complaints about this one! Just want to note that I didn't even ice these (I'm not a big fan of icing in general), they were delicious without it! I also realized in the middle of making them that I didn't have ground cloves, so I substituted allspice. I will definitely make these again!

This was my first attempt at making brownies that didn't come from a box, and if I knew it was this easy I would have been doing it all along! They were probably some of the most delicious brownies I've ever had!

Chipotle Shrimp Tacos

These were pretty tasty! I just thought the tacos could have had more in them than just the shrimp so I added avocado and rice that I already had made. Very good flavors!

I have absolutely nothing bad to say about these. They were so easy to make and turned out terrific! The second time I made them I added some walnuts, but I thought they were pretty great without them, too!

Baked Potato Casserole

This was sooo good, even when I only used about half as much cheese, sour cream, and mayo as the recipe called for (only because I was low on each of them). It was very hard to only have one helping of it!

Marzetti® Hawaiian Slaw

This was absolutely to die for! I made this for my mom and step-dad, and my step-dad doesn't much care for any kind of slaw and he couldn't keep his paws off it! It's a great balance between sweet and tangy that's just perfect!

Seven Layer Tortilla Pie

This one was a hit, except I couldn't fit all seven layers in my pie pan since I had some Italian sausage that I didn't have anything to do with so I just added it to this. I thought it might be strange, but it was surprisingly good! I'm sure it would have been great without the sausage as well, though!

Kalua Pig in a Slow Cooker

Reminds me of being in Hawaii again! It was so easy to make and the only problem with it was having to wait to eat it! I did only have to cook it for about 10-12 hours before it was ready, as opposed to the 16-20 hours that it suggests.

This was pretty tasty, but I think it had a bit too much cream cheese in it. I could only eat so much at a time, but I think if I add more chicken or just less cream cheese it would be fantastic!
