Southwest Black Bean Chicken Soup

This is a nice spicy soup without being overly spicy. I put everything in the crock last night and then put it in the fridge. This morning I popped it in the crockpot and turned it on. Next time I may leave out the corn until serving, to get a crunchy texture. My son suggested to add zucchini and squash chunks, about an hour before serving. I liked it and will definitely make it again!

Slow-Cooker Cacciatore-Style Pork

This was FABULOUS!!! My entire family gobbled it up (even the picky ones) and then fought over the small amount of leftovers the next day. I used Southern style pork spareribs and they were really good. I like using pork with the bones in the crock pot, it does enhance the flavor. I did not use the mozzarella cheese, not necessary.

A-Number-1 Banana Cake

I just made these, as cupcakes instead of the 8" cakes. They took about 16 minutes to bake. I could have probably filled 26 cupcake papers but squeezed it into 24....some have very large tops! They are definitely not even close to the density of a banana bread, they are moist, light and fluffy with almost no crumb. I will certainly make these again. I am planning to make a yogurt frosting to top them for a snack at my daughter's preschool.

Rich Chocolate Frosting

Just made this for my son's birthday brownie. I had him taste it (picky almost-18 year old) and he thought it tasted like chocolate ice cream. It tastes delish!! Can't wait to eat his "cake" tomorrow.

Mid-Eastern Chicken Thighs

I guess I must not be a fan of Mid-Eastern food? This was VERY spicy and the smell is quite overpowering, 2 days later and my house still has a lingering stench from this. I used chicken breasts, my family prefers white meat. They did come out quite juicy. But, they were extremely spicy!!

Pork Tenderloin Marinade

I made this today but used it for pork chops....worked perfectly. I did cut the liquid smoke to 1 tablespoon, I have young kids who can be picky about overbearing flavors. I put the marinade and the pork chops in a ziplock bag and stuck it in the fridge for 4 hours. My husband could not stop raving about how good the pork chops tasted. Super easy and very tasty!!

Shrimp and Crab Enchiladas

Soooo tasty, but I did make a few alterations...I have a teen son who has a spice fixation. I added a can of chopped green chilies, a little sour cream and the scallions to the shrimp and crab. I also used imitation crab. I had a hard time finding the green enchilada sauce, but after an afternoon of searching I did find it. I'm glad I did because it is light enough in flavor to not cover the flavors of the seafood, I definitely think the red version would have taken away from the dish. And, you do need to spread a little sauce on the bottom of the baking dish to keep the enchiladas from sticking. This is getting added to my recipe rotation!! Very easy to make and so good!
