Blueberry Cream Muffins

Halved the recipe to make just a dozen, no changes and they came out perfectly. Golden, light, tender, lots of berries and not too sweet. YUM! An easy recipe to make, definitely a keeper.

Maple Caramel Bread Pudding

So glad for this recipe as I was trying to do something with my unsuccessful attempt at another posted recipe for "potato crescent rolls". Used torn up pieces of rolls for bread and sprinkled some dried coconut & cranberries on top. Also subbed no sugar syrup (as someone suggested) as that is what I had on hand. Turned out great - yummy with some vanilla yogurt on the side!

Banana Muffins II

Great recipe! my 2 yr old loved it - fluffy, light texture, good banana flavour and a great base recipe that you can play with. I also added a dash of vanilla, nutmeg & cinnamon and subbed whole wheat flour and oats to add more nutrients & fiber, also used canola oil instead of butter (as I wanted to whip these up faster) and a tad less sugar more like 1/2 a cup - and they were plenty sweet. Will be my go-to banana muffin recipe, next time with the addition of chocolate chips!

Fluffy Carrot Muffins with Cream Cheese Frosting

Great texture! Wow these turned out really light, nice crumb, great rise - an easy recipe that adapts well. I was looking for an easy & healthy carrot muffin recipe as I've never been able to make a batch that didn't have sunken tops. A few reviews complained about a heavy baking soda taste and although it is perceptible, they were still yummy (maybe shifting dry ingredients together would have fixed this). I liked that the recipe calls for 2 cups of carrots - many use only one grated carrot. As with others, I made substitutions: 2 eggs and 1 tbsp flaxseed with 2 tbsp almond milk to replace third; 1 c whole wheat flour instead of white. 1/3 c oats and 2 tbsp of almond meal (roughly), 3/4 cup sugar and 1/2 of oil, plus added ground ginger, nutmeg & cardamon. Baked for 22 min. Delish with or without icing, bookmarked!

Baked Zucchini Chips

Really good - thanks for sharing! I didn't have some of the seasonings or bread crumbs so I subbed chili powder, garlic salt & used a mixture of dried coconut & flour. Resulted in a creamy curry flavour - amazing! For those who commented in a lack of flavour, I suspect you just need to add a bit of salt or make sure you are using "seasoned" bread crumbs.
