Chicken with a Creamy Marsala Sauce

I made this recipe and my family loved it. I made the following additions/changes. Added 1 clove minced garlic, 1 teas. chicken seasoning, 1 teas. parsley and used half & half instead of heavy cream. Next time I will add fresh mushrooms. This is going in my favorites recipe box.

Roast Pork with Maple and Mustard Glaze

I made this recipe last night and everyone loved it! I made a few modifications though. First of all, I used a 3 lb. roast and I didn't have Dijon mustard so I subbed spicy brown mustard instead. I also added garlic powder and Trader Joe's Everyday Seasoning over roast. I doubled the sauce and cooked it on the stove for about 20 min. to reduce it down to a thicker consistency. I put the whole thing into a slow cooker and cooked it on high for 3 hrs. and then on low for 1 hour. I turned it over every half hour. Came out moist and tender. This is a keeper!

Baked Sweet Potatoes

Just made this recipe as a side dish for the Roast Pork with Maple and Mustard Glaze (recipe on this site) and they were perfect. I wanted to make sweet potatoes without all that butter and brown sugar for a change and this was it. I followed the recipe to a tee except I not a fan of oregano so I used dried rosemary instead. I don't know how much of a difference it would have made, but these came out awesome. Definitely a keeper.

Meatball Nirvana

Just made these meatballs for the first time and my family said they were the best meatballs they've ever had. I made a double batch for six people and they were gone in minutes. I followed the recipe almost to a tee. I didn't have any skim milk so I used half 'n half instead. I also didn't have seasoned bread crumbs so I used seasoned Panko crumbs. Everything else was the same. They came out moist and tender and full of flavor. This is my new favorite meatball recipe and will use it from now on.

Lemony Chicken with Artichoke Hearts

Made this recipe exactly as stated with one exception. I used two tablespoons of cornstarch as other reviewers suggested to thicken the sauce a little more. My family said it was okay but didn't mind if I ever made it again (which I won't because it was quite time consuming).

Simply Divine Meat Loaf with Spinach

I was really hesitant to try this recipe but needed to make something that included a vegetable that my picky granddaughter would eat. I made this exactly as written with the exception of using 2 lbs. of ground venison in place of ground beef. I also added one extra egg. I made it into two loaves so I only needed to cook it for 50 minutes. My grandkids gobbled this up. I put a little ketchup on top to hide the green spinach and they never knew they were eating a healthy meatloaf. It was moist, tender and flavorful. Will definitely be making this again.

Superb Sauteed Mushrooms

I have made this recipe three time now and it is exactly what the title calls it -- "SUPERB." I follow the recipe exactly and it is a huge hit. Last night I let the mushrooms and sauce slowly cook down to a syrupy consistency and it was even better. I would gladly serve this to company as it tastes gourmet. It is excellent over steak, chicken, and even pork. Even my husband who doesn't like mushrooms loved this!

Chef John's Blueberry Muffins

I made these muffins exactly as stated in the recipe and it ended up making 21 muffins. The taste was good but not excellent. They were a little bland and my family said they were lacking something. They said they weren't sweet enough.

Kids Favorite Meatloaf

I am always looking for recipes to incorporate hidden vegetables into my dishes in order for my kids (ages 3 & 5) to secretly eat their veggies. This was the perfect recipe. Instead of using onion & garlic powder, I used finely chopped fresh onion, garlic and red bell peppers. Once mixed into the rest of the ingredients, the kids never knew they were eating veggies. They absolutely LOVED these. I cooked them in a regular sized muffin tin (made 15 muffins) and called them "Super Hero Cups." Big, big hit. They have already asked me to make them again. P.S. Even hubby liked them enough to eat four of them.

To Die For Blueberry Muffins

I doubled the recipe but next time I won't put the crumb topping on top because it made a big mess. I also substituted applesauce in place of the oil and used 1 cup of whole wheat flour and 2 cups of white flour. Wonderful taste and texture. Definitely a keeper.

Baked Teriyaki Chicken

This was a big hit! My hubby usually won't touch anything made with Teriyaki sauce, so I just told him it was a different sauce recipe and he LOVED it. He went back to two more helpings. I followed the recipe exactly as written and it was perfect. Next time though I think I will try it with boneless skinless breasts cut into chunks, add some pineapple chunks while baking, and serve it over rice. If you're in a hurry, this should cut the baking time down by at least half.

Awesome and Easy Creamy Corn Casserole

Yes, I agree it was a very easy recipe to make. However, I baked it for 40 minutes instead of 45 and it was very dry around the edges and just right in the center. Had to cut away about 3" from the edges. Taste was good though.

Key Lime Pie VIII

Nothing special. I followed directions exactly except I added 1/4 cup shredded coconut as another reviewer suggested and no one like it. Everyone said it tasted just like eating a cool whip pie. It also didn't have any green color to it whatsoever, so I added two drops of green food coloring to give it more eye appeal. Still didn't help. Will not make again.

Orange and Maple Glazed Turkey

Followed recipe exactly as stated and the turkey juices and syrup starting burning within the first 10 minutes. I turned the oven down to 400 and it still kept burning the bottom of the pan enough so that the smoke alarm went off. I turned it down again to 375 but I had to add water to the bottom of the pan. Turkey ended up very dry. I will not make this again. I will stick with my traditional way of roasting the turkey from now on.

Apple and Spice Cookies

Great flavor but cookied don't mix well or look appetizing at all. They come out flat like silver dollars and are somewhat dry and fall apart very easily. Make sure you put a plate under your chin.

Peach Cobbler VI

Followed the recipe exactly and my husband loved it. I on the other hand didn't care for it. It was too gooshie. Also, it needed extra sugar & cinnamon sprinkled on the top because I felt it was too bland. Maybe vanilla ice cream also would have helped.

Banana-Zucchini Bread

Good moist bread but it was lacking something. I made the following changes and maybe that's why. I used 1 c. applesauce in place of the oil; 1/2 c. white sugar instead of 1 cup; and 2 cups zucchini. Everything else stayed the same. Also my family didn't care for the dried cranberries in the bread.

Blueberry Boy Bait

Very good but my family thought it tasted a lot like coffee cake and they needed a glass of milk to wash it down. I followed the recipe except I added another 1/2 cup of blueberries and 1 teas. of vanilla and 1 teas. cinnamon for more flavor. Baked it for 45 min. and it was just right. Next time I am going to make a blueberry recipe that doesn't call for quite as much work. It took more than 20 min. of prep time.
