Beef Tips

My husband asks for this all the time. I like to use fresh mushrooms and garlic instead of canned mushrooms and garlic powder. I just saute the mushrooms, garlic and onions with a little butter and olive oil before I add the meat to the pan. Using fresh mushrooms and garlic really makes a big difference. I also like to use only 3/4 cup of water and I add 1/4 cup red wine. About 15 minutes before I add the gravy mixture, I like to add about 1 cup of frozen peas to the beef tips. At the end when I add in the gravy mixture I usually use a little less than one cup of water and add some flour or cornstarch to thicken it up a little more. This is great served over egg noodles or rice.

Mom's Zucchini Bread

This bread is awesome! I don't care for walnuts very much, so I use chopped pecans instead. Everyone loves when I make this recipe, especially my father-in-law! It is also very easy to make.

Buttermilk Pancakes I

I'm not really a pancake person at all, but my husband made these one morning and I love them! I could eat these pancakes all the time. We add 1 tsp. Vanilla and about 1/8 tsp. Cinnamon to the recipe. These are awesome!

Yellow Squash

This is great if you like yellow squash. I make it a little differently though. I grate the squash in my food processor (this way I don't have to mash it after it is cooked) and then put it and the onion in a casserole dish with the lid on and stick it in the microwave. I have a fresh vegetable button on my microwave so I just use that twice. After the second time, I take the squash out, drain it and add the rest of the ingredients. I only use 1/4 cup of milk though, or it is too liquid for my taste.

Sloppy Joes II

I made this one night when I had some left over hamburger buns and I was out of the canned sloppy joe mix. My husband and I both liked it a lot. It was so easy to make and tasted much better than the canned Manwich or Del Monte that I usually use. To cut down on time I use the frozen chopped onion and green pepper. I will definately be making this again!

Angel Chicken Pasta

Pumpkin Swirl Bread

I have taken this to work several times and someone always asks for this recipe. I also like to bake a few loaves to take with me when I am visiting family over the holidays. I get tons of compliments and everyone loves this bread. I usually double the recipe and make three 8 X 4 inch loaves. I always use wheat flour and I never measure the pumpkin batter when I am pouring it into the pans, I just try to get half of the batter on the bottom and put the other half on top of the cream cheese mixture. I have made this so many times and I am still not sure why it is called Pumpkin "Swirl" Bread. I can never get the cream cheese to swirl. It always just looks like a layer of cream cheese to me, but it is still delicious. This makes a great breakfast or desert bread.

Famous Butter Chicken

This recipe is a favorite in my house! We put the crackers and seasoning in the food processer to crush them up and mix them together. After we have dipped the chicken in the egg and crackers we sprinkle more garlic salt on top. Also, we only use half the butter.

Feta Chicken

This recipe was so quick, easy and very delicious. I was a bit nervous at first that it might me a little bland without any seasoning, but the tomato basil feta cheese really adds a lot of flavor without a lot of fat and calories. The only change I made was that I drizzled a little bit of olive oil over each piece of chicken. My husband really loved this. I will definately be making this again!
