Corn and Zucchini Melody

My husband and I loved this. I have made it a few times now and varied it each time, adding diced tomatoes or pinto beans instead of bacon. I always add a handful of cilantro because it compliments the flavors so well.

Chantal's New York Cheesecake

I adapted this cheesecake recipe to make a peanut butter cheesecake for my husband. I added 1 cup creamy peanut butter, and extra 1/4 tsp vanilla extract and 5 snickers bars. It made a very rich, dense cheesecake that my husband has declared to be the bar by which all other cheesecakes will be judged. Great recipe!

Robert Redford Cake

This was a huge hit with my family and my husband, who isn't a pistachio fan, keeps asking me to make it. I want to try adding a layer of fudge sauce between the crust and pistachio layer, but my husband refuses to let me mess with "perfection."

Best Ever Muffins

These muffins are fantastic and really easy to make! I usually substitute 1 cup of wheat flour for all purpose and no one even notices. I usually make these with a cup of blueberries, but have also tried them with 1/2 cup almonds and 1/2 cup craisins. If you try them with craisins I would add a little extra water to the batter as my muffins came out drier than normal.

Creamy Banana Bread

This is a great banana bread recipe that I have made several times and always get raves on. I usually substitute 1 cup of wheat flour for all purpose and add 3 T water. I've used 2 or 3 bananas depending on what I have and how much banana flavor I want to come through. Recently I also made this in a bundt pan instead of 2 loaf pans and it came out great. I pressed some of the topping mixture into the bottom of the bundt and it looked great when I turned it out onto the plate.

Hot Fudge Ice Cream Bar Dessert

This is a new favorite at my house and is on the "most requested" list. I didn't read the recipe as closely as I should have and used hot fudge instead of chocolate syrup - it was fabulous and created a very thick rich chocolate peanut butter layer. As a result it didn't spread very easily over the whipped topping and I had to switch those two layers, putting the whipped topping over the fudge layer.

Peanut Candy Bar Cake

These bars are a must make for anyone who likes sweet & salty combinations. I did have a bit of trouble with the recipe since the peanut topping didn't "spread" very well over the melted marshmallow. I ended up mixing up another half batch of the peanut topping to completely cover all the marshmallow.

Herb Biscuits

This is a great recipe...a real time-saver when you want something more than plain old biscuits. I reduced the amount of butter and sustituted italian seasoning for the dill, since I'm not a dill fan. Any seasoning mix would work well for this.

Catfish Pecan

My husband loved this recipe...and it was so easy! I took other reviewers' advice and decided to spice things up a bit. I added 1 tsp of cajun seasoning, 1/2 tsp red pepper flakes and a dash of cayenne. It had just the right kick.
