Apple Pie by Grandma Ople

Grandma Ople's recipe will go down in history, ya'll. This recipe is the greatest apple pie recipe my friends and family have ever known. It is perfection. Thank you Rebecca for sharing it with us all. Each time I make this pie I am saying a little prayer of thanks to Grandma Ople, and I sing her praises to everyone who asks for the recipe. It's all hers, but this recipe will be in my recipe box when I pass it on to my grandchildren.

Blueberry Lemon Breakfast Quinoa

This is THE BEST recipe EVER! My son is GF,egg-free, milk-free, and I am forever looking for nutritious breakfast for him. I did make alterations due to restrictions: almond milk for milk, sugar for maple syrup, and skipped the flax seeds. If you make it my way, it tastes JUST like Froot Loops. Major bonus for a 10 year old boy! He's eating it for breakfast and lunch and snack...need I say more? Oh, to address comment about bitter taste: yes, rinse it well. And then toast it in pan with butter for 3-4 minutes, stirring constantly, before adding water. (It totally changes flavor of quinoa. Without, all I taste is corn husks - bleh.)

Healthier Apple Pie by Grandma Ople

THE.BEST.PIE.EVER. I've made both the original recipe and this healthier version, and for my taste, this one wins the contest. I can't imagine anyone rating these pies less than 5 stars. You just can't mess them up. Thank you Grandma Ople!! One alteration that made it a tad healthier, still, is I made a whole wheat pie crust. (Recipe: 3/4cup butter, softened; 1/3cup water; 1/4 tsp salt; 1/2 tsp sugar; 1 cup whole wheat flour; 1 cup white flour. It's meant to be 2 crusts, but I squeeze 3 out of it. Roll between 2 sheets of wax paper. Super easy.)

Delicious Ham and Potato Soup

Love the sauce idea, made the texture perfectly creamy. I make just such sauce for scratch mac n cheese, so I made my usual cheese sauce, and split it between this soup and mac n chz for the kids later on.

Spinach Tomato Tortellini

Okay, on it's own, too bland. So here are my 2nd-time-around alterations, which rated 5stars by the fam. Saute'd leftover rotisserie chicken breast, cubed, with olive oil and minced garlic, then scraped the pan with 1/2 cup of water, and added Classico Fire Roasted Tomato sauce (THE best), added Herbox ckn bouillon, 10oz frozen spinach, 1/2cup more water, salt, 2tsp minced garlic. Let it simmer until spinach hot, removed from stove and added 4T+ of lebni (yogurt cheese). (I add lebni to red sauce to make it creamier, and it's a VERY healthy alternative to cream sauce.)Combined sauce with cooked tortellini, served with fresh parmesan and french bread. YUM

Oatmeal Apple Muffins

Would like to have seen these rise more, for a more fluffy texture. Pretty much, whatever it looked like when I dropped it in the pan, it stayed the same shape after baking. I used toasted slivered almonds in place of walnuts, using what I had on hand, and baked it at 350, after reading other reviews. I think next time I will make these as fruit/nut bars, since the texture is so dense. Flavor is fine, might cut out nutmeg next time.

Peanut Butter Banana Smoothie

After seeing the reaction from my 3 kids, I announced that this is a 'dessert' they can ask for anytime. So delicious. Now, one minor alteration, due to milk intolerance: We use vanilla yogurt for all our smoothies, and add water for the liquid. I typically use 1 cup yogurt, and 2 cups water, sometimes a little more. Who ever thought of peanut butter smoothies are genius. I can't wait to try sneaking kale into it :)

Snickerdoodles III

I really love the texture of this cookie, which is what food is all about for me. It has a dense crusty edge and soft center. I know it's a sugar cookie, but the sugar is a bit much for me, so next time I will cut back on the sugar a bit and see how it goes. I subbed whole wheat flour for half of flour and you'd never know it. May up the wwflour next time too. These are perfect cookies for baking with kids, mine love rolling into balls and swirling in the sugar mix. We had a great time making these this afternoon.

White Texas Sheet Cake

Decadent. I made these into cake pops with my new cake pop pans, and used the frosting for dipping. Added sprinkles while it was warm, and they look and taste great. If anyone else tries it, fyi, bake it for 15 min. I also altered recipe by halfing almond extract and adding vanilla for other half of tsp. Smells like sugar cookies in here. I look forward to making this recipe as a sheet cake, too. Very good recipe.

Waldorf Turkey Sandwiches

I've learned to love Waldorf salad in my old age:), and I really like this recipe. I like my nuts toasted, regardless of what recipe I use, but that's the only change made. Yum, yum!

Ladyfinger Cheesecake

Well, Happy Birthday to me...this cheesecake is soooo good. I've always wanted to make cheesecake, always wanted to make ladyfingers, and decided to treat myself for my bday. Scratch ladyfingers, coupled with fresh strawberries, and I'm in love.

Soft-N-Fluffy Hamburger Buns

These turned out great. I did modify, but only to suit our dietary preferences. I did half wheat flour, half bread flour, subbed agave for sugar, increased wheat gluten to 1 T to help wheat flour rise. I also let the bread machine do all of the work, and just formed the balls and flattened them before putting them on the pan for the 2nd rise. These buns turned out beautifully, and taste great. I made super-sized ones this time, and think I'll make mini ones next time, so it's easier for my little ones to eat (and more fun!) Thanks for the great recipe.

Honey Whole Wheat Bread

My first loaf was very dense, so I adjusted for my second attempt by adding 1 1/2 Tablespoons of wheat gluten, and it turned out perfectly. Thanks for the recipe! Baking bread is so much easier than I expected, and is saving me a bundle. And, side by side, my kids are picking MY bread over the store loaf for their PB&J's. What more can you ask!

White Sauce for Pasta

I was looking for an alfredo-ish sauce to serve with shrimp, but don't like using a lot of cream, so this recipe was a great start. Used base recipe, but like others, I altered it to what I had on-hand. I browned flour in butter, added garlic, then milk and Lawry's seasoning salt, and wisked over heat for several minutes, until thickened. Once there, turned off heat and added mozarella and splash of white wine. I stirred in my shrimp scampi, and tossed it with pasta. Served with steamed broccoli. My 3 kids each had 3 helpings, with oohs and ahhs all around.

Creamy Vanilla Pudding

Yummy and creamy, just as pudding should be. I will make it with tad less sugar next time. I got a sugar buzz, as did my kids (bouncing off the walls), right after eating the pudding. Gave it a 5 star...my sugar preference shouldn't reflect on this great recipe's star status.

Garlic Chicken

Ummy, yummy, yummy...everyone cleaned their plate at dinner. Tender is an understatement. This melts in your mouth. Good past experiences led me to bake it in our toaster oven, and I think that took this recipe from great to amazing. I highly recommend this recipe...and the toaster oven:)
