Toffee Sandwich Cookies

These were a bit too sweet for my taste. After making a few sandwiches, I ended up putting a light coating of the frosting on top of the cookie and then smashing it into a bowl of pecan bits. They are still very sweet but easier to handle for me. The cookies themselves are awesome!!

Crustless Cranberry Pie

I made this because of the ease in prep and for the use of my frozen cranberries. My family really enjoyed it, great with coffee and my husband loved it because it isn't too sweet and just a little bite of tartness. I stock up on cranberries when they go on sale after the holidays so I always have some in the freezer.

Good Old Fashioned Pancakes

Pineapple Angel Food Cake I

The angle food cake mix I purchased had two envelopes, an egg white and a cake flour. I only had a can of chunk pineapple, so I put that in my blender. I beat the pineapple with the egg white and then folded in cake flour. I made 31 cupcakes with this recipe (350 degrees for 16 minutes) filling the paper liners almost full. They are very tasty and moist. Thanks!

Dump Cake II

This is such a simple dessert but it is soooo good! Like others, I use canned pie cherries. SCRUMPTIOUS! This is one of my Sunday dinner deserts.

Chicago Dip

So very good. I cut the round loaf to accomodate a small bowl (for dip) so the bread doesn't get yucky, easier to clean up. WARNING: You will find yourself getting out of bed in the middle of the night if there are leftovers!!

Citrus Salsa

I was short a few ingredients, substituted red onion for Vidalia, lemon juice for lime, jalapanos from a jar and only a few slices, sugar for Splenda and omitted cilantro. This was so great and you can do so much with it. I used it to top pork chops but would be great with chips, chicken, almost anything! Very, very good!!

Fragrant Citrus Steamed Pork

This dish smelled so good while it was cooking! The end result is an ok tasting pork chop that doesn't look very good, too pale. You will need something to go with it. I served these with Citrus Salsa(from Splenda) that I found on this site. That made the dish.
