Bacon Feta Beans

This was easy to make and simply excellent. I didn't even bother with the onion powder and black pepper, because we prefer a very strong feta I knew would be seasoning enough. (Don't skip the garlic, though.) It was a rich side and definitely not what you make if you really want the flavor of green beans. But, it was great for dressing up our weeknight dinner, and I can easily see it as a company dish.

Spinach and Strawberry Salad

This salad was delicious, even though I couldn't find either the sesame or poppy seeds. It was a bit too sweet for us, though, and I'll reduce the sugar next time. Still, I'll be making it again and again.

Guacamole

This recipe made a great guacamole my friends and family finished off. The avocado must be ripe, though, so buy it a few days early and leave it out on the counter until good and soft.

Cabbage Roll Casserole

This casserole was easy to make and delicious. I did add a variety of spices, as suggested in earlier reviews, including Worstechsire sauce, a dash of hot sauce, garlic and nutmeg and a little vinegar to draw out the tomatoes. I used ground turkey to reduce the fat, and, possibly due to using drier meat, needed to add another cup and a half of tomato sauce. I served it to company and they kept going back for 'just another bite' well after we left the table and took a copy of the recipe home with them. This recipe will make many appearances at my table.

Sourdough Tomato Bread

We loved this bread! However, I would like to be able to make it with soymilk instead of V-8, but my attempt to substitute directly flopped. Any suggestions? Also, would it be possible to modify the recipe somehow to skip the commercial yeast and make it with just the starter?

Empanadas I

This was a ton of work for a disaster I ended up throwing away. Fault may have been partially mine - I don't work much with dough - but even pulling the filling out and trying to eat it separately didn't work. It was so bland! Didn't taste anything like any of the empanadas I've had. I only made the meat empanadas, but I won't be trying the fruit.

Lime Chicken Soft Tacos

This recipe stood up to being baked instead of sauted, in keeping with our low cholesterol diet. I did substitute fresh cilantro for the dried oregano, but the chicken really came out great. Not my favorite recipe ever, but definitely one for the recipe box.

Eggplant, Zucchini and Sweet Red Pepper Stew

Substituted yellow squash fo the zucchini I don't like, the red wine I had on hand for the Marsala, dried basil and rosemary I couldn't get fresh that day and plain rice for Basmati rice and still got a wonderful dinner. We even enjoyed the leftovers the next day. This is an excellent, healthy vegetarian meal.

Classic Whole Wheat Bread

I took the warning and made this as one loaf originally, but we're going through it so quickly I'm now doubling the recipe to have two loaves. I also give it extra time to really rise well. (Ideally, I mix it up well in advance and then leave it for a few hours before baking.) As a result, its become the staple bread in our house and our dinner guests have been duly impressed by such great homemade bread.

Southwestern Beef Salad

Great salad for a hot summer day. We really enjoyed it, and I enjoyed the minimal cooking. I had teh chips and guacamole dip there, but neither of us thought they went well with the salad.

Kal Pot

Fish sauce seems to be beyond the repertoire of my local gorcery stores, and I tried three places before giving up. As a result, I tried the recipe with Hoisin sauce. I ended up with a so-so taste and a gummy texture, though whether that was the fault of my alteration or the recipe I couldn't tell. We ate it, but I won't be making it again.

Jim's Pork Chorizo

Made mine a little less hot, to suit my tastes, and still ended up with a wonderful sausage. I used it as the meat in my spaghetti sauce (after waiting the recommended 4 days) and ended up with a flavorful sauce better than I've ever had using store-bought chorizo. And it was so easy to make!

Casa Dressing

I was disappointed with my attempt to make this dressing. I used half the cumin suggested and it was still much too strong and overpowered my salad. It was also much saltier than I expected. However, I did love the fresh cilantro. It was edible, but I won't be making it again.
