Barley, Lentil and Mushroom Soup

Reviewed: Feb. 2, 2011
Fantastic! I used about a 1/2lb of chopped bacon and 1T of bacon dripping in place of olive oil. I didn't have porcini mushrooms or any sherry. I eye balled the amount of spices, and I err on the + side. Also added about 1 1/12T of minced garlic at the same time as the carrots. Easy to make, taste great, very filling. Gotta love it.

Copper Carrots

Reviewed: Feb. 28, 2011
I used a 16 oz bag of sliced carrots. Doubled the sauce. Sub'd brown sugar for the white. Fantastic dining. I wasn't overly confident about the recipe, but figured that it was only carrots. We really liked that orange/ginger/carrot flavor. We had a 8 yr old grandson here who only likes fast food (his Mom's cooking). He hardly ate any of his meal, but he sure wanted more carrots! This will be a semi regular at our table now. Thanks for sharing.

Sweet and Sour Sauce I

Reviewed: Feb. 28, 2011
I followed the recipe to a "t". It was fab. We were having company for dinner, so I made sure that I had some store bought on hand just in case. I got a lot of praise for "my" great sauce, and I have an unopened bottle of store bought that I will wind up giving away.

Aaron's Missouri Burger

Reviewed: Mar. 9, 2011
I thought that I had some prettty good hamburger blends that were good. This one is great! For a change I followed the recipe to the letter, next time (this weekend) I will skip the onion powder and mince some onion instead. I did assemble the day before and stored in the fridge didn't have any problem with the burgers coming apart. Thanks for sharing what should be a "secret" recipe. Update: Had a Memorial Day cook out. I did make these up the day prior. Subbed minced onion and garlic for the powder. Everyone said that these were the "best". Maybe because I was the host, but for my "secret" recipe, I got 3 cases of beer in advance. Thanks again for the great burger.

Pineapple Banana Bread

Reviewed: Mar. 15, 2011
Beat out my favorite recipe by a LOT!!! Followed the recipe exactly, and added some choped english walnuts. Would have never thought of adding the pineapple. Betweeen the wife and grandson one loaf was half gone in about 1/2 hr. I have quite a few bananas in the freezer, so will be making again soon. I will probably add more pineapple, sub homemade apple butter for the oil. Made it again yesterday. I added the extra pineapple, subbed apple butter for the oil (omitted the cinnamon). Must have been the smell of the baking, but between neighbors and daughters stopping by, my wife only got the 1 slice that I saved for her. Thanks for sharing this fantastic recipe with us.

Cabbage and Noodles

Reviewed: Apr. 1, 2011
Made this for supper this evening, turned out great. Did do some changes, used garlic instead of powder, cut down on the butter, probably had more bacon (did freeze the bacon 1st, choped it then cooked it). After assemblying everything, I thought that it was coming out a bit dry, so I added some milk, and in the last 5 minutes or so I added some frozen peas for some crunch and color. This is on my rotation. Thanks for sharing

Bill's Sausage Gravy

Reviewed: Apr. 13, 2011
I used hot Italion, and followed the recipe. We had it last night for supper over some potatoes O'brian. Wasn't much left over. Good recipe, and pretty much what I have always done. Next time I go to the grocery I will get some maple sausage, and give it a try.

Mom's Meat Loaf

Reviewed: Apr. 13, 2011
I have looked for meat loaf recipe that really has that WOW factor, and I found it with this one. I picked this recipe to try because all of my hamburger is in 1 lb packages, so I just doubled this one. The only change that I made was to follow another reviewers tip about using stove top stuffing in place of the crackers. I used "Savory Herbs". I usually don't care for sweet on meat, and I almost cut out the brown sugar in the topping. Really glad that I didn't. The sweet and the stuffing flavor did more than compliment each other. We had unexpected company that had supper with us, and WOW was the vote, best anyone had. Wife said that I can make this twice a week.

Lentils and Rice with Fried Onions (Mujadarrah)

Reviewed: Apr. 18, 2011
I too was amazed at how good this was with so few ingredients. The onion really does make this dish. I fried up 4, and l might as well have done up the whole bag. I increased the amount of lental and rice so that I could finish a partial bag. I used brown rice, started cooking the rice 1st then added the lentals in the last 30 min. I also added chopped garlic to the onion. The onion was devoured right away, so we used hot salsa for the remainder, and that was mighty fine also. Next time, and there will be one, I will add curry powder and red pepper flakes. Great tasting, cheap, easy to make. Thanks for posting.

Chicken and Broccoli Alfredo

Reviewed: Apr. 24, 2011
I sauted some onion, mushroom, and garlic with the chicken. I also put in about 11/2t of italion seasoning in the sauce. Everyone liked it. I felt that it was missing some zip. Next time I will add more seasoning to the sauce, and saute some jalipenos along with the chicken.

Baked Ziti III

Reviewed: May 3, 2011
Had this for dinner this evening. Tasted great!!! I did tweak it a bit. I sauteed a green bell pepper, minced garlic, and portabella mushrooms with the onion, and meat. I didn't have fresh basil, so I added about 3t of dried basil, and about 1 1/2 t of orgegano to the meat mixture. Really a great base recipe. Thanks for sharing. I forgot....I also added a can of rotell original to the meat sauce.

Chicken Enchiladas II

Reviewed: May 5, 2011
GREAT, thanks for sharing. This is what I did different. I used corn tortillas microwaved under a damp paper towel for 30 sec, used minced garlic in place of the powder. Used cream of chicken (all that I had on hand). Used chopped jalapenos about a 1/3d cup. Had about a cup or so of store bought hot salsa, added that. The meal was a hit. The wife and kid even did the clean up for me if I make it again this weekend. Easy to make. Tastes great = 5 stars

Glazed Ham

Reviewed: May 8, 2011
Served this for Easter dinner, rave reviews. I didn't have to talk anyone into taking left overs home. I followed the recipe exactly (a shocker to the family). I thought that the flavor was great. However I thought that the meat was on the dry side. Having said that I should also mention that I have a new stove due to wifes insistence to go with a new kitchen. I sure miss the old one. Anyhow will make again, and probably use a baking bag, and keep a closer eye on it. Thanks for sharing.

Garlicky Beet Delight

Assembled this a few days ago for our Sunday cookout. I didn't convert anyone over to liking beets. Those of us who liked beets thought these were great. I too used canned beets and added sliced onion.

Jalapeno Cream Cheese Chicken Enchiladas

Reviewed: May 29, 2011
I really thought that this would be great. No problem with the heat, it just didn't have any wow factor. Evidently the rest of the family thought so also. I had half the pan left, and with my other recipe there have never been anything left. I do think that the left overs will go great in an omlet.

Toasted Garlic Bread

Reviewed: Jun. 2, 2011
I keep frozen garlic bread in the freezer for short notice. This is the best, and if I froze this it would be gone when I wanted it. I do make mine a little "butterier". I never have to deal with left overs. Cut the bread horizontaly follow the recipe and you will have the best pizza bread around. Thanks for sharing

Cowboy Casserole

Reviewed: Jun. 2, 2011
I added some minced garlic, jalpeno, and smoked paprika. I also baked the biscuits ahead of time. Was a real hit with the family. I have made up a double batch for the freezer in individual servings. They seem to have disappeared.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Reviewed: Jun. 2, 2011
As written this is a good recipe, and I reccomend it as is. How ever everytime I make it there is an addition and last nights was the best. I added some bacon, jalapenos, cubed chicken breast, doubled the cumin, some red pepper flakes, and mixed in a can hot rotel tomatoes. No left overs.

Cabbage Sloppy Joes

Reviewed: Jun. 6, 2011
Had this for dinner this evening. Didn't have any celery, but other than that followed the recipe to the "t". Best Sloppy Joe ever!!! I did cheat a bit and bought the bagged slaw mix, used the remainder for cole slaw with marzetti sauce. Had a dieter here, and they put the meat sauce on top of the slaw. Had to try it myself that was pretty good. Will be definatly making this again, but as a double batch it is that good. Thanks for for sharing.
