Healthy Garden Salad

Quinoa Vegetable Salad

Do NOT put 2 tsp's of salt in this recipe. 1/2 to 1 tsp would be plenty. It's really hard for me to comment otherwise. The salt was pretty overpowering.

Mall Pretzels

I was a little apprehensive about making this recipe. I saw that there was no fat in it, and it makes a really stiff dough. I am talking, REALLY stiff. But you know what? It worked like a charm. These taste just like what you would get in the mall. The only recommendation that I would make is to cover the dough with plastic wrap when it is rising as opposed to a cloth. In my dry climate, at least, it's necessary to trap in as much moisture as possible.

Rockin' Salsa

Sorry - not my favorite. After reading the other reviews I opted to add only a quarter cup of white sugar and omitted the brown sugar, and added only half a tablespoon of cayenne pepper. The result was perfect as far as how sweet and hot it was, but I think the tomato taste is a little overpowering, probably because of the tomato paste. It could also be that cooking for 3 hours is just too long and it had reduced too much. I have tasted homemade, canned salsas that have a much more "fresh from the garden" garden taste.

Swedish Meatballs I

This is so yummy. I can't really speak for authenticity, but it is an easy recipe that my family and I love. The meatballs are easy to make if you use a mini ice cream scoop - the kind that you use to make cookies. I also cooked them in a frying pan instead of the oven to speed up the process. I serve it with mashed potatoes.

This is really good. The only thing I will say is if you substitute dry beans that you have cooked for the canned beans, you might want to add a touch of salt to the recipe. Definitely will make again.

Honey Oatmeal Bread II

I made this in my Kitchenaid and it turned out really well, with a couple of minor changes. I didn't have any honey, so I used an equal amount of brown sugar. I also found that it needed at least 2 more cups of bread flour than indicated in the recipe.

Crispy and light and since you don't have to roll them out, they're also not as labor intensive as many sugar cookie recipes. This is definitely a keeper.

Tuna Noodle Casserole I

This is a great recipe! You know you've got a winner when your family asks for seconds - of tuna noodle casserole no less! The only thing I did differently was saute a little onion in the butter before adding the flour. Delicious - highly recommended!

Farm Macaroons

These were really yummy, but not the kind of macaroon that I'm used to. This turned out to be more of a meringue with coconut in it. I think there was too much egg white in the recipe, and/or not enough coconut.
