Creamed Spinach from Oikos®

Very yummy! It was good the first time, but still pretty rich, even though I used a 1lb bag of spinach. The 2nd time around I used organic virgin coconut oil instead of butter, whole wheat flour, and only about a 1/2 cup of Greek yogurt. I also used mushroom broth ("Better than Bouillon" brand, a broth paste you can keep in the fridge). Even my husband, who is a bit grossed out by the texture of spinach, liked this! That's success.

Peanut Butter Cake VI

Changes I made: Used whole wheat flower; Reduced sugar to 1.5 cups; Used butter instead of margarine; Skipped chocolate chips since I knew I'd glaze it with chocolate. Since I reduced the sugar I should have reduced wet ingredients a little. The cake was very moist but delicious. I made 50% more and filled one regular loaf pan and 3 mini loaf pans. I cut the top off to make it flat, turned them upside down, and built a train engine with the big one and one small one, then turned the remaining 2 into a tender & freight car. I used melted chocolate chips with a little dollop of vegetable oil in it (to make it shiny) as the glaze & glue. Added cookies as the wheels and gum drops / candy coated sunflower seeds / M&M type candies as lights and load. I only used organic candies with no artificial colors/flavors. Letter cookies from Trader Joe's were handy for a letter & number. None of those things mattered when it came to flavor of course. Well, to the 3-yr-old they probably did!

Greek Salad

I skipped the artichokes, as my husband dislikes them, and put whole pitted kalamata olives in a dish next to the salad for everybody to sprinkle on themselves for the same reason. I used olive oil instead of CRISCO. I forgot to get a lemon, so I used lemon juice. I like my dressing sour, not too oily, so I used equal amounts of vinegar & lemon juice to double olive oil (in other words: 1 part vinegar, 1 part lemon juice, 2 parts olive oil). Yummy. Got lots of compliments on the dressing especially, and my husband wants to try it again as an antipasto salad with mozzarella and salami in it.
