Penne with Eggplant

Fixed this recipe last night. I substituted Japanese eggplant (which are naturally smaller) and it worked wonderfully. I will make this again.

Slow Cooker Carnitas

I completely revised this recipe. Cinnamon seemed odd because it wouldn't give this type of recipe a smoked, spicy taste. To accomplish my goal I used a combination of 1/4 tsp allspice, doubled the garlic (fresh, minced), and then added 2 tablespoons olive oil and 1.5 tablespoons chipotle powder. I doubled the cumin and kept the salt about the same. I also kept the bay leaves to 2 and doubled the oregano. Finally, I doubled the coriander but decreased the stock. After 6 hours on high I added more stock and turned the meat over. It was a complete hit in our household!

Todd's Famous Blueberry Pancakes

Excellent recipe! Hardest part was to wait at least 45 minutes as the recipe says. I knew I would be eating a lot of these because of the prior reviews, so I doubled the recipe the first time. The pancakes were fluffy, tender, and extremely flavorful. I will be using this recipe again without any changes!

Meat-Lover's Slow Cooker Spaghetti Sauce

I looked at this recipe and saw over-reliance on spices, not preparation to allow a good base to integrate the spices. I started by making my own base, mixing 1/2 lb ground pork with 1lb ground beef and 1/4 tsp nutmeg, 1/2 tsp ground fennel, and 1 tsp ground sage to create a full 1.5 lbs of pork/beef sausage. After this was finished, I drained it and added it to the slow cooker. I added 2 tsps olive oil and added 1/2 cup red red wine, 4 minced garlic cloves, 2 onions, 1 stalk of celery, and 1 carrot. When that had softened, I added that to slow cooker as well and sort of followed the original recipe, skipping the Italian seasoning, but keeping to the rest. It was very good after these different changes.

Indian Chicken Curry II

I have made it twice and my family loves it. Much better than some restaurants at which I tried a similar dish. Very complex spices, although Cayenne is a Western spice it really doesn't "hurt" the overall flavor of the dish.

Makhani Chicken (Indian Butter Chicken)

Lots of work, definitely not a weeknight dinner meal. Goes well with either brown rice or pure naan. With the leftovers I had a large amount of sauce so I added some frozen peas and fresh mint. Wonderful recipe!

Chicken Breasts Pierre

After a few minor tweaks in the recipe, my family of picky eaters all agreed that this was a good recipe. First, instead of celery seed, I used one stalk of celery, roughly chopped.Also, not having stewed tomatoes on hand, I use a can of chopped tomatoes instead. Finally, I cut the butter out altogether, using olive oil. After that, the recipe came out wonderful!
