About this Cook
I am a 50 year old professional who works 50+ hour weeks and cooks every night for two, something for which my husband adores me. :-) I think cooking is cathartic and the "transition time" that allows me to de-stress from work with a glass of wine and culinary adventure is an important part of my day.
My favorite things to cook
Breakfasts and dinners. Don't like to bake but I will do chocolate chip cookies because my husband LOVES them and I've a fantastic recipe that I can make in my KitchenAid. :-)
My favorite family cooking traditions
Roasts, spaghetti sauces, macaroni and cheese from scratch (yes!) and "something chicken."
My cooking triumphs
Just about any time I am up against the clock and limited on ingredients but still come up with something fabulous that my husband considers a "make again" is a triumph.
My cooking tragedies
Trying to bake like I cook dinner. You just can't wing it... I hate following directions so closely. So when I don't it's usually a mess. :-p

Spicy Green Beans and Pork, Asian Style
I grabbed this recipe a few months ago and make it at least once or twice a month. I was looking for something close to what is served at the wonderful Chinese restaurant my husband and I have been going to on date night since our first date and this is pretty close! :-) I use two chicken breasts cut into very small pieces (instead of the pork), coconut oil instead of vegetable oil, and increase the sauce proportions (1.5 to double depending on the size of the chicken breasts). Chef Rita hit it -- the blistering of the beans is the key and the sauce is super yummy. It's a huge hit any time I make this!

Chard Tacos
This was VERY yummy! To make this a vegan meal, I substituted the chicken broth with vegetable broth and the queso fresca with tofu and it was fabulous! I warmed whole wheat tortillas in a little coconut oil and topped with homemade salsa fresca and these tasted like fish tacos! Excellent, fresh and so healthy!

Classic Texas Caviar
I brought this to GNO last night and it was a hit. Everyone wanted the recipe. Next time I make this I will double the recipe and use fresh tomatoes instead of canned (a previous reviewer was correct -- if you use canned, drain very well!). Loved it!!
