Satiny Chocolate Glaze

Made this in a double boiler and followed the directions exactly. It came out perfectly and was delicious. I used it to top the Garbanzo Bean Cake.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I've made this recipe twice, exactly as the directions state. First time, the cake seemed dry and I had chunks of garbanzo beans. The second time, I blended everything for twice as long in the food processor and it made all the difference. It had a fudgy brownie texture and was oh-so-smooth, almost like a cheesecake. I topped it with the Satiny Chocolate Glaze, strawberries, and whipped cream. Everyone requested the recipe.

Penne Pasta with Spinach and Bacon

This recipe was phenomenal! We used diced tomatoes with sweet onions and topped with a bit of parmesan cheese. I also drained the pan after cooking the bacon so that only a very small bit of bacon grease was left in the pan. Less calories, but still a great bacon taste. This will be going into our dinner regular rotation.

Marinated Scallops Wrapped in Bacon

This recipe is getting filed under "do again and often." It's the perfect blend of sweet and savory, with a wonderful texture. We marinated about 15-20 minutes. We couldn't find large scallops, so we used medium and left them whole. Amazing!

Cajun Chicken Pasta

This was good, but nothing I'd make often. I substitued fat-free half and half, and marinated the chicken in KC Masterpiece Cajun Marinate instead of using powdered cajun seasoning. It was a bit hot for me, so I think I'd reduce the pepper next time. I also wish I'd sauted the peppers and mushrooms a bit longer. Hubby wasn't impressed by this one.
