Roasted Pork Tenderloin

Absolutely delicious! I used Boars Head bagged sauerkraut,and drained minimally. And I did follow the tip about keeping it under foil - I took the foil off after 2 hours and turned the oven off but left it in, just to get a bit of temp on it. Rave, rave reviews all around. Even my non-sauerkraut eater ate the pork! Served with mashed potatoes (a must with sauerkraut in my house) and the baby carrots & diced apples another reviewer mentioned, tho with those I used a lite margarine and splenda. They were awesome with it as well.... Def going in the recipe box for repeats :)

Irish Soda Bread I

I make this at LEAST once a year on St Patty's, but people start drooling around New Year's. Awesomeness - exactly as it is. I only put the raisins in some boiling water first to plump them a little. Put a little real butter out with it - incredible!

Collard-Kielbasa Soup

Amazing - totally different way to enjoy Collards! Only change I made was the using chicken broth for water (and more of it) and the meat - since we had leftover ham along with a few potatoes I needed to use and a bunch of fresh greens. (oops - my greens were fresh too) I made it all together in a pot on the stove, then put the whole thing in the crockpot on low for a great "eat as you pass by" pre-Christmas-shopping meal." One last thing - DON'T forget the green pepper portion of the dish - I almost did, it was the only thing I had to out for on the list, but it is essential to the total taste of the soup. Again - just amazing - and so nice to have a second way to serve greens that totally switches them up!

Cheesy Potato and Corn Chowder

Used 2% milk and 2% cheddar - left out chili's (would have been great but company coming that wouldn't have eaten them) and added some diced carrots and a little broccoli just for fiber. Also had a smoked chicken thigh in the fridge that I shredded up and added. Between the extra fiber and protein I added, and the lower fat dairy products, the soup actually came in at very low points for a chowder (WW). Kudos - I don't mind making a roux, but the country gravy mix works excellently in this soup and as I pick up several when they go on sale, this will be a regular winter rotation. Oh - I added fresh corn instead of cannned - I just added it and the broccoli halfway through the potato cooking time. The carrot I sauteed with the onion and a little garlic at the beginning. YUM!

Cabbage and Apple Slaw

Rocked! Served with an oven baked flounder and broccoli. Only change was when we just could not discern the sweetness of the honey. I added one packet of Splenda, and that did it. Also, for color pop I sprinkled it with some black sesame seeds. Thanks SO much - deceptively simple, and we will definitely be making this again!

Chicken Pot Pie IX

Fantastic! Only minor changes were adding one small diced potato, and a little sage, paprika, bay leaf, and two bouillon cubes to veggies and chicken cooked in water. This way I had a good chicken broth to use for her next step already. Just drain that stuff into a measuring cup and voila. Oh, and because I didn't have a pie plate (we are at the "in the apartment between buying and selling and most stuff is in storage) I used a small rectangular casserole dish and just rolled out the refigerated pie doe so it would dit in the dish. Had not problems at all - it probably took me maybe 5 minutes longer to get the browning I was needing, but that's an old oven here is my current world. This is not only a keeper,but will be on a regular rotation here now. This IS my go-to chicken pot pie recipe. Thanks so much! Loved it, loved it, loved it - and best of all everyone else did too!

Macaroni Ham Salad

I don't like mayonnaise, so I appreciate guidance when making these types of salads for my family. This was loved by them all - the only suggestion I received was that possibly capers might compliment the flavor. Also, I did add a few peas cooked from frozen in the same water I boiled the eggs in. Very nice!

Chicken Salad Spread

I use this with leftover turkey, and my family starts talking about it as soon as I put the bird in the oven! I really hate mayonnaise, so I needed some precise instructions since I can't "taste test." All raves from everyone who tries it. Thanks so much!
