Slow-Cooker Chicken Tortilla Soup
This soup was crave-able. The leftovers were talking to me from the fridge. I made this on the stove (around 4 hrs). I subbed diced tomatoes w/ garlic for the whole peeled tomatoes. I also added 3 fresh tomatoes diced up to make it a little more tomato-y. I used all chicken broth (made from bouillon). Didn't have a bay leaf or corn tortillas. After about 3 hours simmering I tasted and added some add'l cumin, chili powder and crushed red pepper. It still could have been spicier but delish nontheless.

Cha Cha's White Chicken Chili
First attempt at white chili and I really enjoyed it. I added 2c of frozen corn, 1 less can of white beans and topped with cheese instead of mixing it in. It was slightly soupy which I enjoyed. I'd make this again.

Zucchini and Potato Bake
I liked the taste and texture. Potatoes and veggies were nicely browned. The garlic slices turned into burnt chips... I think maybe running the cloves through a garlic press may have been better. My zucchini/red pepper/carrots were a little mushy even with generous cuts. It was a little high on calories/fat for my taste.
