Krissy's Best Ever Corn Muffins

Strawberry Muffins

I thought these were really good. I followed some of the suggestions: added 1 tsp cinnamon, 1/2 cup brown sugar, vanilla. I didn't add the vanilla yogurt as that would have made it complete soup. I found that I needed the flour others were taking away. I used 2% milk. My strawberries were from the garden so somewhat mushy, maybe that is why. If you just add a few chopped berries to the flour at a time and toss as you add I think it helps. The cooking time slightly overcooked my muffins that were in a muffin sprayed with pan. I had doubled the recipe and I tried some in foil liners - and the recipe time was perfect for those. Thanks for the recipe. I have never made strawberry muffins before this. Many other kinds, but not strawberry! Kimberly

Mexican Pizza I

We liked it so much we ate it 3 nights in a row! I did use ground turkey (7% fat) and followed the suggestion to bake the tortillas. I just baked them with the beans, ground turkey and cheese on them. We also added lettuce since we don't care for olives...

Salsa II

Fantastic. We cut the jalapenos in half and only used the seeds from two like someone suggested. We still found it at least medium in intensity and we like spicy food. What a great way to use up all of the tomatoes from our garden. And I plan to freeze a batch of this salsa as well.

Lasagna Alfredo Roll Ups

We loved these. Ate them three days in a row. The only change I made was to add mushrooms and serve with red sauce overtop. I really preferred this to lasagna and we love lasagna. It was so easy to serve.

Owen's Veggie Stir-Fry

I give it 4 stars b/c my husband liked it so much. For me it was more of a 3. I should have just gone with my instinct and used peanut oil. It could use more corn then just 2/3 cup. I added oyster mushrooms and thought they were really good. Still not a bad stir fry. But I prefer to wing it I guess.

Juiciest Hamburgers Ever

These are definitely very juicy, and we have made them twice. I will keep this recipe for now...I am always on the lookout for a better burger recipe. These burgers do not knock your socks off taste-wise but they do beat a plain burger. Next time I plan to increase the worcestershire sauce for more flavor.

Mexican Chicken Corn Chowder

I did not care for this soup. This recipe was too greasy/fatty with the half and half and all that cheese. I love a cream-based soup, and I also love cheese but it was just too much. If there is a next time, I will use milk. However my (less picky) husband thought the soup was delicious and ate the leftovers for lunch. It is definitely filling enough to be the main course of your meal.

Buttermilk Pancakes II

Very good, but the batter made WAY too much for myself, myself, and my daughter, and we all are fairly big eaters. We refrigerated the leftovers and had another meal a few days later. Scale the recipe if you just want one meal.

Oaxacan Tacos

I really liked this recipe but I altered it somewhat. I did not fry the tortillas, just used them soft. And I cooked my onions with the steak, and then tossed the steak & onions, w/the salt, pepper and lime juice in a bowl and let it sit in the fridge for half an hour. The steak just cooked in oil by itself did not have much taste. Also I added shredded cheddar cheese and put homemade guacamole in my taco. Next time, and I WILL make it again, it was yummy, I will use flank steat b/c the cut the recipe calls for is so much more expensive. Thank you Lola, I enjoyed this meal and can't wait for my leftovers tonight.

Chinese Chicken Salad III

Well finally I know the secret ingredient in my favorite salad at Houston's Restaurant: Hoisin sauce. The salad was good, I just didn't love it. The sauce was good but I should have added the veg. oil as suggested by other reviewers - it clung heavily to the greens. Also I love spicy but I thought the chili paste was too much. Maybe cutting it in half or even leaving it out would be prudent. I tried 1/2 Napa cabbage, wish I had stuck with all romaine. Oh, and the wontons were great. If you cut them thin and bake them on a cookie sheet - at low heat as suggested by another user - they puff up and taste great. Make extra b/c your family might snap them up before the salad is ready. Oh, and I sauted my chicken in some hoison sauce and sesame oil. It did add a lot to the taste of the salad I thought.

Turkey Brine

I needed a LOT more vegetable broth to cover my 10 pound turkey in my 5 gallon cooking pot. I had to get up in the middle of the night to turn the bird since 8 cans on top of what was called for didn't cover him. Also I wish I had brined it for longer...now that I am reading up on this topic.

Brown Family's Favorite Pumpkin Pie

This was excellent! I will stop looking for a pumpkin pie recipe. As one of the reviewers noted, it is not necessary to whip the egg whites. I didn't try the topping this time, but I might whip some up to put on the leftover pie for tonight.

Cranberry Sauce Extraordinaire

Five Star beyond a shadow of a doubt. My husband was really giving me grief about spending the time making this when I could buy a can and cut along the "cool little ridges". But he ate more of this than he did the turkey at Christmas dinner. When I was reading the recipe I was thinking chutney, and it definitely can double as chutney. I poured it over the cream cheese block while still warm and it was incredible. Note: I did not have an orange so I doubled the apple, and as a result I had to increase the water and sugar.

Blue Ribbon Sugar Cookies

These were great cookies although not being a sugar cookie fan it took a couple to convert me. Also they taste even better the 2nd day. I did 1 teaspoon each of the extracts and the texture of the dough was perfect. I wouldn't have minded more lemon flavor even but I was following the advice of the other reviewers. My husband loved the cookies. Also I did not have red sugar but as it is Christmas my husband decided to improvise and mixed some red food coloring with some white sugar and although it was wet & you had to kind of crumble it on like a topping, it turned out yummy. I only chilled the dough for 30 minutes, wish I had had more time. It did seem to be a very greasy dough when I was rolling the balls, probably due to the liquid crisco. The presentation of the cookie was beautiful, they spread out just enough and looked like a bakery cookie to me.

Taste of Home's Morning Glory Muffins

These were pretty good. My 12 month old loves them. I like the combination of healthy foods. I am leaving it 5 star b/c I altered the recipe somewhat - halved the sugar and threw in a tablespoon of wheat germ. I may try it again with the original recipe.

Basil, Roasted Peppers and Monterey Jack Cornbread

This was delicious. I had company and recieved lots of compliments. It did, however, take FOREVER to make, and I am not usually one to complain about the length of time it takes to prepare anything. Another note: put it in the refrigerator. Mine spoiled within a day and a half.

Best Ever Chocolate Chip Cookies I

I do have to revise my review. The next day this cookies were wonderful. And, I put a piece of bread in the container with them and they have tasted great for over a week (I made the full recipe). I still say they need a little more something tastewise, more vanilla maybe??? But they were definitely great cookies. I did mash half of them with a fork after rolling into balls and I liked them better that way.

Buffalo Chicken Wings

Sorry I didn't care for this recipe. I agree that it is was way too much butter, not spicy enough, the sauce didn't stick to the wings and I now have fatty blue cheese dressing coming out my ears. Everyone's tastes are different!
