I will never use another batter! We gathered over the 4th of July weekend with 26 other camping friends at our campground and fired up two turkey fryers. Everyone raved over the onion rings! Best tasting rings all had ever tasted. We went crazy with the batter. We even battered pickles, oreos and hot dogs too! Hint, make the batter up an hour or so prior to dipping so the batter starts working a little and when food is dipped, a thick coating just clings to the food items. Loved the onion rings and pickles the best! Thanks for sharing this recipe. There were many happy families enjoying it over the holiday!!

Chicken Enchilada Casserole II

Great tasting recipe. Family doesn't care for beans too much so left them out, but didn't miss them. Very tasty. The 7 year old up to the 16 yr old child liked it so a keeper in my box! Thanks!

Mall Pretzels

Turned out great. I didn't use parchment paper but greased sheets and worked out just fine for me. I had a few left over and placed them in freezer in freezer bags. We warmed them in microwave and tasted just like fresh baked. Definitely a family favorite recipe to keep. Thanks!

Chocolate Chip Muffins

I made these early in the morning we left for vacation and packed them in simple gallon size zipper bags. They traveled wonderful and made for a great snack. The recipe made 18 for me. Had a few left over the next morning and they were still delicious the next day. I did take others advice and used 1 cup white sugar and 1 cup milk along with adding 1 tsp. vanilla. I also used a whole bag of chips (we liked it that way!!). Became an instant family favorite recipe.

White Pizza with Roasted Garlic and Green Olives

Yummy... obviously you can add or subtract ingredients to your preference to this.. I thinly sliced plum tomatoes and layered on top before baking (just because it sounded good) LOL. Nice change of pace from traditional pizza.

Lemon Butter

This recipe is simple and delicious. I used it with a lemon muffin recipe that was a little bland after baking. This recipe is perfect. The lemon butter definitely made the muffins more pleasing to serve. I did add a drop of yellow food coloring for presentation sake only. Easy and such a tasty butter. Will go into my favorite recipe file. Thanks!
