Fried Chicken with Creamy Gravy

Good as written, but also excellent (and a lot less calories) using boneless chicken breasts and frying them in 2T butter and 2T oil. (Of course that amount of fat is negotiable!)

Cornbread Casserole

I made it according to the recipe with one change -- I had to use a different size of cornbread mix (7pz). I couldn't find the larger size required. As for the sour cream, I used 2 T (Would that be one ounce?) of light sour cream. The resulting bread was a hit. Leftovers would make a good breakfast with a couple of sausage links and some fruit.

World's Best Pasta Sauce!

I made the sauce with turkey sausage. (Don't laugh; it's good stuff.) It was amazing. My husband loved it, despite the lack of fat.

Pan-Fried Asparagus

It's hard to go wrong with asparagus, but this recipe is perfect, because it is incredibly EASY. Top to bottom -- it's done in 10 minutes.

Classy Chicken

A big hit with my husband, who is a diabetic. I served it on whole-wheat egg noodles. The sun-dried tomatoes give this dish a kick.
