Ratatouille

This was my first time making ratatouille and my husband and I loved it. I served it over a moist corn bread but polenta would also be good. I used two cans of diced tomatoes instead of fresh and cooked the onions for a few minutes with the garlic. Otherwise I followed the recipe, except for adding about a half hour to the baking time.

Original Chex® Party Mix

This is a Christmas tradition at our house. But over the years we've tweaked it. We've always used plain old party peanuts and instead of bagel chips, we've come to prefer Pepperidge Farm cheddar goldfish. The first recipe we used called for Cheerios and small stick pretzels, the "nuts and bolts" which we still use. When the family sits around the table playing a game, there's always nuts and bolts and beer! How good it that?

Absolutely Ultimate Potato Soup

This is very similar to my favorite potato soup recipe but I only use 2 or 3 slices of bacon, and half and half, rather than cream. And instead of the tarragon and cilantro, try marjoram. You won't need much. About 1/4 of a tsp. to start. It's such a nice spice in cream of potato soup and also cream of broccoli soup. Well worth experimenting with.

Easy Meatloaf

I've made this recipe for many, many years and love it. When my kids were little, they didn't like the little pieces of onion in it, and I didn't either, so I'd put the onion into my blender, along with the milk, and emulsify it. A pinch of nutmeg in the topping is good, too.

Six Can Chicken Tortilla Soup

We really enjoyed this. I followed many of the suggestions for spicing it up to our liking and it's very good, and even better the next day. It also freezes well. My favorite kind of recipe. Thanks everybody.

Pumpkin Sheet Cake

This was very good. And even better the next day. I used a regular 13 by 9 inch pan instead of making a sheet cake, otherwise, followed the recipe as is. I may try a whipped cream icing with it next time. Thanks for sharing. Lolly

Holiday Chicken Salad

I had all the ingredients on hand (except the green peppers) so made this for a light Sunday supper this weekend and it was very good. A fruit salad, fresh rolls and a light rose wine and we were all set.

Fresh Rhubarb Pie

I love rhubarb pie and this recipe is the same one that I got from my mother. Fresh rhubarb in our local grocery store is quite expensive now. (lucky you if you have your own) One pound of fresh will be about 3 cups if you don't have to trim it too much.

Stuffed Shells III

I made this one evening during the holidays because we had a few vegetarians in the crowd and it was a real crowd pleaser. Easily made, easily doubled. Along with a salad, toasted garlic bread and a good wine, it was a real hit. Thanks, Renee!
