Black Bean and Corn Quesadillas
My husband and I really like this. I've made it twice, now, following the recipe both times, except I added a pressed garlic clove with the onion and I buttered the fry side of the tortillas as thinly as possible. They browned better that way. And sprinkle the cheese on the bottom and top of the filling and the tortillas will stick a bit better. They're still "goodly messy" but so good.

This was my first time making ratatouille and my husband and I loved it. I served it over a moist corn bread but polenta would also be good. I used two cans of diced tomatoes instead of fresh and cooked the onions for a few minutes with the garlic. Otherwise I followed the recipe, except for adding about a half hour to the baking time.

Original Chex(R) Party Mix
This is a Christmas tradition at our house. But over the years we've tweaked it. We've always used plain old party peanuts and instead of bagel chips, we've come to prefer Pepperidge Farm cheddar goldfish. The first recipe we used called for Cheerios and small stick pretzels, the "nuts and bolts" which we still use. When the family sits around the table playing a game, there's always nuts and bolts and beer! How good it that?
