Spinach Phyllo Cups

If I could give this recipe more than 5 stars, I would. I made some changes based on the advice I found here and the results were STELLAR: 1.) Use Garlic/Herb Feta. 2.) Doubled the amount of fresh garlic used (we love garlic at our house) 3.) Add a half cup of Parmesan to the mixture. 4.) Diced Roma tomatoes on top of the mixture after it's in the shells (but BEFORE baking) 5.) Shredded mozzarella on top of the tomatoes. These changes resulted in an absolutely delicious winner of a recipe that is on my permanent keep list.

My mother has been fixing these since I was tiny and now I've started doing the same. If you like more flavor in the filling, try adding celery seed. It really livens it up.

Chocolate Frosting II

I thought this frosting recipe was fabulous, and I will totally be using it again. I also cut the sugar down to 3 cups (based on other reviewers' opinions) and I added it gradually, so that it was easier to blend. I also added the milk as I was blending the frosting in, rather than at the end. It made for an easier experience. Don't forget that if it's too thick for you, you can ALWAYS add more milk til it's where you want it to be.

King Cake

A fair amount of work, but the outcome was worth it! Next time, I'll definitely double the amount of filling, and find a less-lemony glaze for the top. It wasn't bad tasting, but it was a little strong. :) It was a great way to add a little flair to our Mardi Gras dinner!

Chicken Pesto Pizza

This was a great change from standard pizza night! I used Valentinos Pizza Crust from this website, but I didn't wait for it to bake all the way through since I normally don't prebake the crust - BIG mistake! trust the prebaked note on this recipe. I also used more cheese and less chicken, and I used an Italian blend. Will be adding this to our regular recipe rotation!

Oatmeal Chocolate Chip Cookies I

This was amazing!!! I followed another cook's advice and added vanilla and butter instead of shortening. It was so delicious it was hard for me to get the batter into the oven!!! I baked one batch and froze the rest so I can have them at a moment's notice. HURRAY!

Aunt Teen's Creamy Chocolate Fudge

I followed the recipe for this EXACTLY and my fudge turned out horribly. It got hard and crumbly and grease seeped up out of it. I tried to sop it up with a paper towel, but after I put it in the fridge more seeped up and congealed. I had thought with 1371 reviews and 4.5 stars I would be fine, but the problem is mine: I should have read more of the bad reviews to dodge potential issues. I think the major problem was that I added the chocolate chips all at once, and tried to stir by hand instead of using my stand mixer. Those of you who made this and made it work, I salute you. After this recipe bombed, I had enough marshmallow creme to try again with the recipe on the side of the jar, and it turned out perfectly. Sorry, Aunt Teen. I think your fudge recipe just isn't for me.

Brownie Mallow Bars

This is the easiest dressed-up-brownie experience ever. I melted one package (12 oz) of Nestle Semisweet chocolate chips (the smoothest melting chocolate chips I've ever found) in the microwave, then mixed the peanut butter and butter in til melted, then gradually added the rice cereal. The recipes calls for the brownies to be baked longer than I like to bake mine, and I altered that, but I realize that it creates a crunchier brownie, which makes a really nice base crust for the rest. It works with softer brownie too though. My coworkers devoured this!!!

Herbed New Potatoes

These were amazing, and are very forgiving when it comes to tweaks. My husband got red potatoes, not new potatoes, and they were cooked too long so when we tossed them with the butter/sour cream mixture they fell apart and became a cross between mashed and regular potatoes. However, they were still DELICIOUS and WONDERFUL. WIN!!!

Goat Cheese and Arugula over Penne

Really loved the goat cheese in this. Roasted the tomatoes with garlic before using them, and had it with rosemary/olive oil bread. Delicious!

Chinese Chicken Fried Rice I

This wasn't awful, but it didn't wow me either. I'm new to fried rice, so I think because the recipe said "Add rice, stir, heat through" that I didn't "Fry" the rice sufficiently. I'm still giving it a 3 because if that was the case, the instructions weren't clear. Still, it was easy and good, just not what I expected by the recipe title "fried rice".

Peach Pie

Delicious! I used two bags of frozen peaches (run under water beforehand to thaw, I didn't know if you could just bake them frozen but I didn't want to risk it). I also used half brown sugar, half white, and threw in a tbsp of cornstarch. And now that I think about it, I forgot the butter completely! But it was delicious, didn't notice the lack at all!

Harvest Salad

Delicious!!! I took this to dinner with friends and it was a hit. My changes: left out the tomatoes (we don't care for them); used a bag of Spring Mix salad instead of the spinach, I didn't toast the walnuts (didn't notice anything amiss). I also used seedless jam (all I had onhand) and olive oil instead of walnut oil. THIS WAS WONDERFUL!!!

Oreo™ Cookie Bark

This was a huge hit at my family's Christmas celebration this year! I took other cooks' advice and was careful to spread it as thin as possble and that made it easy to break. I made 2 batches and bagged it up as stocking stuffers, and we're munching on the leftovers. This will go on my make-again list!

Easy Valentine Sandwich Cookies

We made these cookies in Christmas shapes as Christmas gifts, and they were great! I was afraid the almond extract would make them taste funny (since it was an unfamiliar smell) but it gave them a nice sweet taste and I'm really glad I didn't omit it. They're a very crisp cookie, and be sure not to let the baking paper (we used parchment) bunch up on the sides of the cookie sheets, as it might cause the cookies to bake in weird shapes. Also, we used powdered sugar to roll them out with, and it made a nice sweet dusting on them.

Sausage Balls

These are amazingly easy and delicious. I made them for brunch with friends last weekend, and it reminded me of Christmas. Like the recipe-submitter, these were also a Christmas morning tradition in my house growing up. Maybe they will be again!
