Traditional White Bread

I have a KitchenAid with a dough hook. I basically used this recipe except I substituted 1/2 cup milk for 1/2 cup of the water, and used butter instead of lard. I used 2 Tbsp of dry yeast, and put the yeast and sugar in the mixing bowl. Then put the milk, water and butter in a large measuring cup and heated in the microwave for 2 min, and added that to the mixing bowl with the salt. Then I added 5 cups of flour, 1/2 cup at a time until well mixed. Then I replaced the mixer beater with the dough hook and added the final flour a little at a time until it reached the right consistency. Once the dough hook finished its job and the dough was one smooth ball with little residue on the side of the bowl, I covered it and let it rise, shaped into loaves for second rise, then baked at 375 for 30 min. It is perfect!

Monkey Bread I

I also made some changes. I used frozen dinner roll dough instead of biscuits (16 balls of dough, thawed and cut into quarters & let rise for 30 min in warm oven. Then I used half the sugar & cinnamon, and half the brown sugar, but used a full cube of butter. I also used chopped pecans and no raisins - don't like raisins! It was delicious!!!

Chicken Tortilla Soup I

Absolutely delicious! I didn't have hominy on hand, so omitted that. Also omitted the can of green chilies that I also didn't have, but finely chopped a frozen serrano pepper. Best soup I've ever made!

Rosemary French Bread

I don't have a bread machine, and I really like to knead it, so I made it the old fashioned way. I doubled the recipe, and instead of adding butter, I added 1/4 cup (for 2 loaves) of olive oil. I was worried when I took it out of the oven because it seemed so hard on the outside, but once it was cut, the inside was nice and moist! Next time I would add more rosemary and garlic, since I used fresh instead of dried. I used 2 cloves of fresh garlic chopped fine, but it could have used a little more. This bread will be great with olive oil and balsamic vinegar! I will make it again with some modification like 16 tablespoons equals 1 cup, so 1 cup plus 1 tbsp. per loaf of water is what you want.
