Bacon Wrapped Smokies

This saved the day when unexpected guests arrived (including young children. 4 and 5 years old) I didn't have Smokies so I cut hot dogs in thirds and wrapped them. Worked out great. They are now requested whenever these friends visit.

Chicken Mummies

I give it a 4 for flavor but a 5 for fun. I made these with my niece after watching a documentary in King Tut. It was a fun together time and a tasty meal too. She made me promise to make them again, so this one is a keeper. Thanks for the recipe and the memories. PS...I forgot to mention that we used tooth picks to secure the strips while wrapping and baking.

Sweet Onion and Pineapple Chicken Teriyaki

This is a five star all the way. (and I don't give them out willy-nilly.) Two small changes tho...since I didn't have frozen pineapple I used canned chunks. Also since the sauce seemed a little thin for my taste I made an easy fix with a little corn starch and cold water. No big deal there. Without a doubt, we will be having this again.

Scrambled Eggs and Shrimp

I probably shouldn't rate this recipe since the shrimp I used was left over from a BBQ and had been brushed with butter, garlic, tabasco and lemon sauce. That being said, after I peeled the shrimp I followed the recipe exactly as written and it was great.

Scrambled Eggs a la Charlotte

I've prepared this twice now. Once exactly as presented, thus the 4 stars. The second time I cut the tarragon in half and since I thought the egg to vegie ratio a little off, added two more eggs. A little melted cheese toped it off for us.

Doggy heaven. The only change I made was to use low salt beef broth. I know that raw garlic is a no-no, but garlic powder in moderation appears to be okay according to my research soooooo?...

Taco in a Bag

I had been living out of state and shortly after I returned I found out that my niece was having emergency surgery. Naturally I offered to keep my 7 year old great-niece for the week or so needed for moms recovery. My concern was that other than meeting once or twice for holidays, the child and I were pretty much strangers. Luckily I remembered this recipe and WE decided to put it together for our first lunch. By the time we were eating out of the bags we were great friends. This recipe will be remembered by both of as not only as very tasty in and of itself, but as a building block to a loving relationship.

Cream Cheese Won Tons

That can of clams I thought I had when I checked the pantry turned out to be mushrooms!!!! But what the Hay, I used them instead and this happy little mistake turned out wonderfully. I will make this "mistake" again.

Strawberry Goat Cheese Bruschetta

Let me make this perfectly clear....I Don't like goat cheese, too earthy. I don't like strawberries, too many little seeds to get caught in my teeth. I don't like Balsamic vinegar, too strong, and you want me to reduce it as well....PLEASE. I DO like this recipe, exactly as posted....go figure.

Spinach Caprese Salad

This is a fast, easy, attractive and fairly tasty salad when I prepared it exactly as posted. Thus the four stars. There are only two of us so with the leftover basic recipe I made the following changed/additions for the next evening. To the greens I added a few slivers of thinly sliced red onion. To the dressing I added 1 clove of roasted garlic paste 1/4 tsp of dried Basil and Oregano and a tiny pinch of cayenne pepper. The addition of the spices to the dressing made it a little more Capreseish to my taste. Also, may I suggest preparing the dressing ahead in a small bowl and allow to sit while you prepare the main course. This allows the flavors to blend a little.

Grilled Shrimp and Chicken Pasta

Loved it, loved it.... I did modify slightly tho... Since I am not a big fan of powders I replaced the garlic powder with 2 TBS of minced garlic. I replaced the onion powder with 1/2 c chopped onion. I prepared the shrimp in the wine mixture instead of the grill where they picked up some extra flavor. That along with an extra pinch of cayenne pepper for pop and a little corn starch to thicken the sauce and you have a keeper.

Chicken Tetrazzini IV

I prepared this recipe twice....once exactly as posted and once adding minced garlic, chopped onion and 1/4 cup white wine to replace the sherry. Both were VERY good tho the recipe as written may be a little bland for some tastes. For that reason I gave it a very solid four stars instead of five. This is a keeper. I will make it again.

I prepared exactly as written. I just wish I could give it more stars. Next time I might try adding some pineapple, red onion, green and yellow bell peppers carrots, etc. Definitely not necessary tho.

Sweet 'N Sour Meatballs

I have tried this twice, once exactly as written (the four star rating) and found it more of a Sweet and Hot than a Sweet and Sour. I would suggest on cutting down on the hot sauce to about half or so. The 2nd time I cut the chili sauce down to two bottles added pineapple, red onions and green and yellow bell pepper. I also added about one third to one half a cup of the pineapple juice and a little corn starch to thicken. This I served over rice. To me it was very good. But since is really a new recipe I did not include it in my rating.

So easy, Soooo good! Freshly grated Parmesan is a must. My only suggestion would be a little black pepper to taste and chopped parsley for color.
