Taco in a Bag

I had been living out of state and shortly after I returned I found out that my niece was having emergency surgery. Naturally I offered to keep my 7 year old great-niece for the week or so needed for moms recovery. My concern was that other than meeting once or twice for holidays, the child and I were pretty much strangers. Luckily I remembered this recipe and WE decided to put it together for our first lunch. By the time we were eating out of the bags we were great friends. This recipe will be remembered by both of as not only as very tasty in and of itself, but as a building block to a loving relationship.

Cream Cheese Won Tons

That can of clams I thought I had when I checked the pantry turned out to be mushrooms!!!! But what the Hay, I used them instead and this happy little mistake turned out wonderfully. I will make this "mistake" again.

Strawberry Goat Cheese Bruschetta

Let me make this perfectly clear....I Don't like goat cheese, too earthy. I don't like strawberries, too many little seeds to get caught in my teeth. I don't like Balsamic vinegar, too strong, and you want me to reduce it as well....PLEASE. I DO like this recipe, exactly as posted....go figure.

Spinach Caprese Salad

This is a fast, easy, attractive and fairly tasty salad when I prepared it exactly as posted. Thus the four stars. There are only two of us so with the leftover basic recipe I made the following changed/additions for the next evening. To the greens I added a few slivers of thinly sliced red onion. To the dressing I added 1 clove of roasted garlic paste 1/4 tsp of dried Basil and Oregano and a tiny pinch of cayenne pepper. The addition of the spices to the dressing made it a little more Capreseish to my taste. Also, may I suggest preparing the dressing ahead in a small bowl and allow to sit while you prepare the main course. This allows the flavors to blend a little.

Grilled Shrimp and Chicken Pasta

Loved it, loved it.... I did modify slightly tho... Since I am not a big fan of powders I replaced the garlic powder with 2 TBS of minced garlic. I replaced the onion powder with 1/2 c chopped onion. I prepared the shrimp in the wine mixture instead of the grill where they picked up some extra flavor. That along with an extra pinch of cayenne pepper for pop and a little corn starch to thicken the sauce and you have a keeper.

Chicken Tetrazzini IV

I prepared this recipe twice....once exactly as posted and once adding minced garlic, chopped onion and 1/4 cup white wine to replace the sherry. Both were VERY good tho the recipe as written may be a little bland for some tastes. For that reason I gave it a very solid four stars instead of five. This is a keeper. I will make it again.

I prepared exactly as written. I just wish I could give it more stars. Next time I might try adding some pineapple, red onion, green and yellow bell peppers carrots, etc. Definitely not necessary tho.

Sweet 'N Sour Meatballs

I have tried this twice, once exactly as written (the four star rating) and found it more of a Sweet and Hot than a Sweet and Sour. I would suggest on cutting down on the hot sauce to about half or so. The 2nd time I cut the chili sauce down to two bottles added pineapple, red onions and green and yellow bell pepper. I also added about one third to one half a cup of the pineapple juice and a little corn starch to thicken. This I served over rice. To me it was very good. But since is really a new recipe I did not include it in my rating.

Calabrese Style Spaghetti

I served this as a side dish with roasted chicken and a green salad. Quick, easy and very tasty. The only change I would suggest is cooking the garlic in the butter first or better yet using roasted garlic instead. This recipe could be easily converted to a main dish by adding diced onion, salami or bacon, eggs, and fresh Italian herbs/seasonings. You might also consider sun dried tomatoes, olives, spinach, or even ham and peas. The options are endless with this solid recipe as a foundation. VS

Eggs and Spaghetti

Very good with a couple of slight changes. I used three cloves of roasted garlic instead of garlic powder. I diced the onions and increased them to a slight one fourth cup, and, since I only had ground rosemary, I reduced it to about half or so. As a quick note, I was only going to give this recipe 4 stars but considering the quick prep time and common "on hand" ingredients used, I decided it really did rate a qualified 5 stars.

Spaghetti with Bacon

I've tried this twice now, first as written and then again with additions. The second time I added onion, fresh basil. red pepper flakes and parmesan cheese. I also reduced the olive oil slightly. Just a suggestion, this recipe is great as is.
