Boardwalk Quality Maple Walnut Fudge

I made these to give out at Christmas and they were a huge hit. I had several people ask for the recipe. I left out the walnuts (I know, it's the most important part...) only because I wasn't sure about nut allergies at my office. It didn't have an overwhelming maple taste, just a hint, which was perfect. My husband ate a ton of it, and he doesn't even like fudge! Even the dogs ate it (which is another plus because since there's no chocolate, it was ok!). My favorite part about this recipe was how incredibly simple it was. Impossible to mess up, super quick and very very easy. Took 5 minutes tops! A+++++++

Easy Curry Couscous

This is my first time making couscous and it was beyond simple. The flavor was pretty good and I added a bag of frozen corn the last 5 minutes. Turned out pretty good!

Cranberry Scones

I was so disappointed with these, but I'm pretty sure it was my fault. This was my first attempt to make scones. To start, the recipes calls for cranberries, but doesn't say to do anything other than leave them whole - so I chopped them. The dough wasn't really dough, it was more of a gooey substance that almost resembled something that could be edible at some point. I even tried adding more flour but to no avail. Talk about gooey sticky messy! There was no chance I could knead or roll it so I just glopped it on the baking sheet. They tasted ok, but I wasn't impressed. HOWEVER - the butter = AMAZING!!! I'll be making that again for toast or biscuits or *store-bought* scones, haha.

Peppermint Snowballs

I love these things, but I will never, ever make them again. Positives: very pepperminty, different from the normal holiday cookies everyone makes, and just plain yummy. Negatives: BACK ACHE. These things take forever to roll. I even had to get my hubby to help because my back was killing me after about 50 of them. Only make these if you have a lot of time! I didn't realize just how long they would take otherwise I would've started an hour or 2 earlier.

Sesame Tilapia

I thought this was very good. I was shocked at how insanely expensive sesame oil is though. Due to this one thing, I probably won't make it again, but it really tasted great!

Southern Yank Pulled Pork BBQ

I've had better. There's something just not quite right about this - my husband and I both read over the ingredients over and over to see what that odd after taste was from and couldn't figure it out. I think I'll be looking for a new bbq recipe.

I make this recipe all the time. I made it one time for my husband and his friends and they (all big burly Marines who swear they don't like veggies) raved about it. Perfect side dish for just about anything.

Raspberry-Glazed Rosemary Chicken

I thought this was wonderful. My husband however, not so much. It definitely would have been better without the seeds from the preserves. Next time, I'll find a jam or a concentrate that doesn't have seeds.

Mexican Chicken Soup

My extremely picky husband told me that this was in the top 5 meals I've ever made. A few changes: to cut down on the cooking time, I cut the chicken into strips and cooked in a skillet with the taco seasoning. Then I let it simmer in the soup for an hour (on accident, but it was extra tender). The last 15 minutes or so, I added a can of corn and a can of black beans (both drained) per another reviewer's suggestion. I served it with the hint of lime chips - amaaaazing! Don't forget the avocado - it makes all the difference. Making again tonight - tripling the recipe and using a whole chicken and extra avocado :) Yum yum!

Jamaican Jerk Chicken

Just ok, although I didn't follow the recipe exactly. It was too cold to grill out so I ended up baking the chicken in the juices instead (also didn't have time to marinate). No one complained about it, but no one seemed to love it either. Probably won't make again unless I have time to grill and marinate.

Easy Cheesy Chicken I

My husband loved this. I changed it a little based on what I had in the pantry: 2 cans cream of chicken, 2 cans cream of cheddar cheese soup, and the rest of the ingredients listed. I forgot to add the sour cream but like everyone else said, it didn't even need it. Wonderful! It cooked all 12 hours while I was at work and was perfect.

Mango-licious Tilapia

I love fish - especially tilapia - but I have to say, I've had better tilapia. I let the fish marinate in the orange juice concoction for about 20 minutes and still, the fish by itself didn't have much flavor. The salsa on the other hand - oh my! AMAZING. I'll definitely be making it again and again and serve it with everything. I served the tilapia over brown basmati rice (and discovered that we don't like basmati rice!) and covered it with the salsa. I enjoyed it - can't say I loved it. Next time, I'll probably do the salsa with chicken and regular white rice and see how that goes! Overall, a good recipe.

Sweet, Sticky and Spicy Chicken

WHOA SOY SAUCE! I even doubled the honey and brown sugar but all I could taste was soy soy soy! I thought it tasted great, but, definitely not a "sweet sticky" dish - spicy, yes, but only because I added cayenne. I think next time I'll try some sort of thick teriyaki sauce, plus the other ingredients, and leave out the soy all together, or maybe just add a splash. Hubby wasn't thrilled with it but he ate it. The sauce did go amazing with the rice though!

Orzo and Rice

My husband hates pasta - absolutely won't eat it. So I decided I'm going to change him (typical woman, I know!) and I started with this dish. He said it was way better than any other rice I'd ever made, and then I told him it's half pasta. He wanted to be mad but it was so good, he couldn't say anything except how good it was. Success!! Only gave it 4 stars though because it reheats terribly. So don't make more than you can eat!

Carrot Rice

This was good, but not very tasty. I thought for sure it would be out of this world but by itself, it was pretty bland. I served it with Chicken Curry over top and let the sauce run all over it - it was incredible this way, but I certainly would never serve it unaccompanied.
