Easy Mexican Casserole

The chips got very soggy and the sour cream was not good cooked in it. Would be much better just topped with it. Flavor in general wasn't appetizing. My husband and I both LOVE stuff like this and I thought it would be a sure winner, but it definitely needs tweaking!

Mexican Chicken Soup

My extremely picky husband told me that this was in the top 5 meals I've ever made. A few changes: to cut down on the cooking time, I cut the chicken into strips and cooked in a skillet with the taco seasoning. Then I let it simmer in the soup for an hour (on accident, but it was extra tender). The last 15 minutes or so, I added a can of corn and a can of black beans (both drained) per another reviewer's suggestion. I served it with the hint of lime chips - amaaaazing! Don't forget the avocado - it makes all the difference. Making again tonight - tripling the recipe and using a whole chicken and extra avocado :) Yum yum!

Easy Cheesy Chicken I

My husband loved this. I changed it a little based on what I had in the pantry: 2 cans cream of chicken, 2 cans cream of cheddar cheese soup, and the rest of the ingredients listed. I forgot to add the sour cream but like everyone else said, it didn't even need it. Wonderful! It cooked all 12 hours while I was at work and was perfect.

Baked Potato Soup

This was pretty good. I added extra broth and half and half as it had too many spices for my picky husband. I'm not 100% sold on it and I'll probably keep tweaking this until it's just right.

Raspberry-Glazed Rosemary Chicken

I thought this was wonderful. My husband however, not so much. It definitely would have been better without the seeds from the preserves. Next time, I'll find a jam or a concentrate that doesn't have seeds.

Too Much Chocolate Cake

I made this in a cupcake version which obviously needed tweaking. Instead of a 5.9 oz pkg of pudding, I used 2 of the small ones (1.2 oz I think), fat free sour cream, and 1 cup of mini semisweet choc chips and 1 cup of large milk choc chocolate chips (plus the other ingredients). I baked for 16 minutes on 325 and they were incredible!! I also iced them with my favorite icing (Triple Chocolate Fudge Chip) - yumm!

Easy Curry Couscous

This is my first time making couscous and it was beyond simple. The flavor was pretty good and I added a bag of frozen corn the last 5 minutes. Turned out pretty good!

My husband absolutely loved this. I wasn't thrilled with the health factor but it was very tasty. My only complaint is that it needed double or maybe even triple the hashbrowns.

Maple Salmon

I just made this last night and I will be making this ALL the time. I doubled the sauce/marinade and ended up just letting it marinade for about 10 minutes as I was pressed for time. It was perfect.

Carrot Rice

This was good, but not very tasty. I thought for sure it would be out of this world but by itself, it was pretty bland. I served it with Chicken Curry over top and let the sauce run all over it - it was incredible this way, but I certainly would never serve it unaccompanied.

I've had better. There's something just not quite right about this - my husband and I both read over the ingredients over and over to see what that odd after taste was from and couldn't figure it out. I think I'll be looking for a new bbq recipe.

Jamaican Jerk Chicken

Just ok, although I didn't follow the recipe exactly. It was too cold to grill out so I ended up baking the chicken in the juices instead (also didn't have time to marinate). No one complained about it, but no one seemed to love it either. Probably won't make again unless I have time to grill and marinate.

Orzo and Rice

My husband hates pasta - absolutely won't eat it. So I decided I'm going to change him (typical woman, I know!) and I started with this dish. He said it was way better than any other rice I'd ever made, and then I told him it's half pasta. He wanted to be mad but it was so good, he couldn't say anything except how good it was. Success!! Only gave it 4 stars though because it reheats terribly. So don't make more than you can eat!
