Awesome Carrot Muffins

These were really good. I didn't have any raisins so I left them out with no problem. Also, to cut back on fat and calories, I replaced some of the oil with applesauce (about 1/3 cup) and used 2 whole eggs and 2 egg whites. Turned out great. Stay nice a moist for a few days.

Ground Beef Enchiladas

This was delicious! I added a some diced tomato when I was rolling them up. Found that it made about 12 enchiladas using the small size torts. Cheesy, beefy, creamy and good.

Hash Brown Quiche

I made this recipe with a few modifications in order to make it in a large 9 x 13 pan (fed 6 very hungry people!) Used 4 cups hashbrowns, 1 can flaked ham, used green onion, added 1/4 cup diced red pepper, used 1 cup milk and increased eggs to 6. Will add more cheese next time too. Everyone loved it. Sour Cream Coffee Cake I

Loved this coffee cake. Simple to make and I like that it uses alot of sour cream. Made a really moist cake and I got to use up all the sour cream in my fridge!

Baked Fresh Cherry Pie

This pie was okay, but it lacked the 'WOW' factor I was expecting after reading all the glowing reviews. I didn't like the tapioca element as it made the filling very firm and not juicy at all. Would not make it again.

Honey Garlic Ribs

These ribs were very easy and really tasty. One (big) problem though, was the mess it made in my oven! I would recommend using a deep dish pan as opposed to a cookie sheet as the sauce kept bubbling over into the oven and burning and smoking. Not fun to clean up.

Roasted and Curried Butternut Squash Soup

This was good but, sorry Lesley, NOT worth the extra time and effort to roast the veggies. I have made many butternut squash soup recipes and this one was not the best. (I added extra curry for more kick too.)

Pasta with Scallops, Zucchini, and Tomatoes

Sugar Free Granola

Delish!! This is the recipe I have been looking for. My husband and I are trying to cut out sugar- refined and things like honey, syrup etc- so this recipe is perfect. Great nutty, toasty flavour and just a hint of sweetness. Merci Isadore!!

Vietnamese Fresh Spring Rolls

These were great. I used grilled pork instead of shrimp (b/c its what i had). Also, I tried both dipping sauces and they were excellent! I did add a bit more chili sauce, though, as we found it not spicy enough. Thanks Paula.
