Cajun Chicken Pasta

Very delicious! My wife REALLY loves this recipe after I made a couple of modifications: I use 2 whole peppers (one green, one yellow/orange), 1/2 a yellow onion instead of a green onion, no mushrooms. If you have a taste for spicy, I agree with other recommendations to dump in a LOT more of the cajun seasonings than the recipe calls for. By default it isn't bland, but you've definitely got some room there.

Best Ever Jalapeno Poppers

These were INCREDIBLY delicious! I wound up giving them 3 layers of bread-crumb breading and that seems to be a good amount. It took me a bit longer to make these than the recipe claims, however. TOTALLY WORTH IT!

Italian Breaded Pork Chops

My wife and I normally don't particularly like pork chops, but this recipe was great. I skipped parsley and chopped in some fresh basil because I had it on hand. Very delicious!

Tiramisu II

Delicious recipe for tiramisu! It came out a lot like restaurant tiramisu. You will need to make a lot more of the coffee/rum mixture than the recipe calls for, though.

Pot Stickers Traditional

DELICIOUS recipe, but you should follow comments on cooking directions. Lots of great flavor! The filling was so good I found myself eating a bit of it here and there as I stuffed the dumplings. For cooking, I recommend steaming the dumplings first, then pan frying them just enough to darken them and make them crispy. I tried the way described in the recipe and I couldn't get them to come out right, plus there was a lot of spattering, even in a deep pot. TIP: Mix a little corn starch and water to make a glue to seal the dumplings. It works REALLY well without altering the flavor.

Ground Beef Enchiladas

A great recipe! Very easy, very flavorful and delicious. I added some chipotle peppers in adobo sauce to the cream sauce for some extra kick. The smoky chipotle flavor goes REALLY well, but this recipe stands up fine without it as well.

Sausage con Queso Dip

Incredibly delicious! Obviously REALLY bad for you, but what do you expect from cheese and sausage? I always use a char of salsa rather than a can of tomatoes. Another tip: when browning the sausage try to get the sausage as fine as you can. Big chunks of sausage break chips.

Flan Mexicano (Mexican Flan)

This was an amazing recipe without any alteration: I will definitely be making this recipe many times. My wife, our friends and I all loved it. I used several smaller custard dishes rather than a large flan dish and it turned out great. After you've got the dishes prepared, put a kitchen towel in a baking dish, put the smaller custard dishes on the towel, and fill the baking dish with water until it is about half way up the side of the custard dishes.
