Cherry Tomato Salad

Black Magic Cake

Not much else is needed on this very rich dark chocolate cake. It's moist, fluffy, and the coffee gives the cake that wonderful bitter taste of very dark chocolate. I usually just make a ganache for this cake instead of frosting b/c I don't want to wash out the flavor of the cake. Mmmm.

Burgundy Pork Tenderloin

This was so easy, flavorful, & hearty. It's presentation and flavor are good enough for a dinner party, but it's quick & easy enough for a weeknight meal. My thoughts: the celery isn't necessary, add minced garlic, serve with a fresh green salad & French bread (to soak up that awesome sauce), & MAKE SURE YOU USE A GOOD RED WINE (one that you'd drink).

French Onion Soup Gratinee

Primavera Noodles

simple, inexpensive, easy, and tasty. I put all of our veggies in the pot since I don't care for crunch. Felt this brought out the mushroom flavor more. Also used more parmesan.

Annie's Fruit Salsa and Cinnamon Chips

Followed recipe exactly (except used melted real butter instead of the kind from the can). I used apricot preserves, which worked perfectly. This is as yummy as everyone says it is. :) Oh, make sure to dice the fruit (especially apples and strawberries) very fine so it's easy to dip.

Banana Pudding IV

I doubled the recipe (kind of hard to do in regular-sized mixer), but it still turned out great. We ate some a few hours after chilling, and it was still a bit liquidy. But by the next day, it was the perfect texture. And it tastes just how banana pudding should.

Serious Herb Cheese Spread

Everyone loved this fresh take on a cheeseball. I served it w/ large Wheat Thins and used less dill and more worchestershire. About half was eaten at my Christmas party, so I remolded it *blush* and served it again at my family get together a few days later. It was even better the 2nd time.

Quick and Easy Chicken Noodle Soup

This is a fabulous way to use leftover chicken! And it's really good! I've always been a from scratch chicken soup only gal but decided to try this since I had some chicken on hand already. I was totally impressed. I followed directions and ingredients exactly, only 1/2 tsp adding herbs de provence (just b/c I look for any opportunity to use that). Definitely a repeat.

Luscious Spinach Artichoke Dip

Served this at a Christmas party w/ simple tortilla chips & it was great...I even doubled the recipe & it was still almost gone when the party was over. Definitely serve/keep it warm.

Sausage Casserole

Followed directions exactly and wouldn't change a thing! This was one of the best breakfast casseroles I've made, and I've made a lot. A food processor w/ a shredder attachment mades the job easier. I just pressed the potatoes with my hands to squeeze our moisture. The final product is fabulous.

Tartar Sauce I

This is the perfect ratio of tarter sauce ingredients. For a twist, add a half teaspoon of creamy horseradish. But the recipe is perfect as it, too.

I loved this salmon recipe. I did not have fresh ginger on hand, so I used powdered: It worked well (use less of it though). I will definitely make this recipe again.

Hot Corn Dip

Doubled the recipe, did not use cilanto, used 1/3 less fat cream cheese, and made it in the slow cooker. YUM! This dip was a hit...All of it was gone by the end of a 3 hour pool party. I had several people ask for the recipe. Because of the bang for the buck, the ease of the recipe, the amount it can feed, and the great taste (nothing compromised), this will be part of my regular party dip rotation.

Spicy Shrimp Skewers

YUMMO! This was great! I followed the recipe, and I added a tad bit of garlic powder. My shrimp only marinated for about 45 minutes and were cooked on a George Foreman. Served on top of Bamati (sp?) rice w/ Hoppin' John as a side dish (it's New Year's Day), this served as a balanced savory, sweet, & spicy dish that was refreshing for the month of January. I can't wait to make this at future BBQs this summer served w/ pineapples on the skewer w/ the shrimp. p.s. This marinade would also be great w/ salmon.
