Ham and Cheese Bowties

Super easy and yummy. I typically mess up a mac n cheese. Not sure what was different about this one. I added frozen mixed veggies to the pasta at the end of boiling to make it a better balanced meal. Also, not a big deal, but I used penne instead of bowties since that's what I had on hand. 2 year old loved it! p.s. I used non-fat milk...Suprisingly worked like a charm.

Rempel Family Meatloaf

I add a 2 tbsp brown sugar to the mix to make this the PERFECT meatloaf. No icky, sticky ketchup mess needed on the top to make this moist. And the flavor combo is fabulous, especially for the low amount of ingredients. We won't even try another meatloaf recipe anymore. This is the meal my husband wanted before leaving for Kurdistan.

French Onion Soup Gratinee

B.L.T. Salad with Basil Mayo Dressing

For the first time ever, I didn't change a thing as far as ingredients go, and the only instruction thing I did differently was that I toasted in the oven instead of over the stove (oh, and with olive oil instead of canole......I lied). Either way, this was FABULOUS!!! I'm not a big salad eater, especially as the main course, but my husband and I ate all of this in one sitting - literally. This is a do-over, and I'm guessing will be a hit a shower or luncheon.

Strawberry Champagne Punch

Fairy-Tale Mushrooms

Cute idea. I modified using mozzarella cheese sticks cut up and halved cherry tomatoes "glued" together with pesto. I didn't put the mayo dots on top: Used Kosher salt, olive oil, & balsamic vinegar instead.

Slow Cooker Sweet and Sour Kielbasa

My husband had one bit and proclaimed, "Wow." This is definitely a repeat, and it was so simple - something new to do with all the sausage we get sucked into buying at Costco. I following the ingredients exactly (estimating measurements), but I cooked it low and slow in the oven with foil on top instead of using the slow cooker. I took the foil off the last 15ish minutes before serving. Great potluck item.

Incredibly Cheesy Turkey Meatloaf

I cut this recipe in half, but other than that made no changes. This is another good, cheap, quick, semi-nutritious, delicious weekday recipe. I have found a couple of other meatloaf recipes on this site that I like better, but they are all made w/ beef and require me to chop something. This recipe is a bit different and will be in our monthly rotation. Thanks!

Black Magic Cake

Not much else is needed on this very rich dark chocolate cake. It's moist, fluffy, and the coffee gives the cake that wonderful bitter taste of very dark chocolate. I usually just make a ganache for this cake instead of frosting b/c I don't want to wash out the flavor of the cake. Mmmm.

Blue Cheese and Pear Tartlets

OMG! These were so good! It was the first appetizer to go! I did follow a few of the suggestions: used Gorgonzola instead of bleu cheese & drizzled honey on the top after a few minutes of cooling. I also added about 2 tablespoons of light cream cheese to balance the Gorgonzola and to make the tart a little creamy. Also, I forgot to add the light cream at first, so I "poured" a drop onto each tart individually after I filled them. This turned out fine. There was quite a bit of mix left after filling the 15 tartletts, so I created my own tartlets by using regular philo dough (sp?) and cutting it into small squares (about 5 or 6 layers). If you make your own, make sure you brush melted butter on the dough so it will turn golden. (I forgot that step.) Next time, I will dice the pear pieces up smaller & add a piece of walnut to the finished product before drizzling the honey. The description said it was time-consuming, but I found this to be one of the easiest things I've made in a while. The "work" is in dicing the pear & filling the tarts - not time-consuming at all.

Burgundy Pork Tenderloin

This was so easy, flavorful, & hearty. It's presentation and flavor are good enough for a dinner party, but it's quick & easy enough for a weeknight meal. My thoughts: the celery isn't necessary, add minced garlic, serve with a fresh green salad & French bread (to soak up that awesome sauce), & MAKE SURE YOU USE A GOOD RED WINE (one that you'd drink).

Luscious Spinach Artichoke Dip

Served this at a Christmas party w/ simple tortilla chips & it was great...I even doubled the recipe & it was still almost gone when the party was over. Definitely serve/keep it warm.

Brown Sugar Meatloaf

If you're looking for a different meatloaf recipe, try this one. It's original in flavor. I added sauted bacon pieces to the mix to "kick it up a notch" and incorporate another element of flavor that paired well with the brown sugar. This also tasted *wonderful* the next day for lunch. I did make a little more of the sauce then what's called for and put it on top of the loaf the last 10-15 minutes of baking. To the sauce, I added worchestershire sauce, dijon mustard, and garlic powder. p.s. If you don't like your meat sweet, then don't try this one. Or don't try this and rate it poorly. It is "brown sugar" meatloaf. If this is you, try the Rempel meatloaf (also on this website.)
