Good way to sneak veggies into toddler's spaghetti. I processed the veggies before adding them to the tomato sauce/paste. Also added Kosher salt and Italian seasoning. Still can definitely taste the eggplant, but it's disguised enough that she ate it.

Ham and Cheese Bowties

Super easy and yummy. I typically mess up a mac n cheese. Not sure what was different about this one. I added frozen mixed veggies to the pasta at the end of boiling to make it a better balanced meal. Also, not a big deal, but I used penne instead of bowties since that's what I had on hand. 2 year old loved it! p.s. I used non-fat milk...Suprisingly worked like a charm.

Primavera Noodles

simple, inexpensive, easy, and tasty. I put all of our veggies in the pot since I don't care for crunch. Felt this brought out the mushroom flavor more. Also used more parmesan.

Lime-Pineapple Delight

Super sweet but still good. I think I would use less or even no sugar next time. I served it at my St. P's play date. I only put 1 liter of the carbonated beverage and let moms choose to either top their punch off with champagne or more soda.

Fairy-Tale Mushrooms

Cute idea. I modified using mozzarella cheese sticks cut up and halved cherry tomatoes "glued" together with pesto. I didn't put the mayo dots on top: Used Kosher salt, olive oil, & balsamic vinegar instead.

Sausage Stuffed Mushrooms II

Completed recipe exactly as suggested. Some people loved them; others only ate a nibble. I think it was very rich for those peeps. But it was a super easy themed appetizer for my daughter's bday party.

Lemon Cream Pasta with Chicken

Good weeknight recipe. Basic ingredients & quick. I used the Foreman grill vs. baking the chicken. Added sundried tomatoes & artichoke hearts, which were good but not necessary. Peas could also work.

Slow Cooker Stuffing

The flavor was fine, but the texture was slimy & pudding-like. I followed the recipe exactly but followed the advice of reviewers and only added enough broth to keep it moist. I would like to be in the kitchens of those who ranked this a 5-star: Either they don't know what stuffing should be like or they are fabulous chefs doing something different than I'm doing.

Slow Cooker Chicken Stroganoff

This only slightly resembles regular beef stroganoff, but it is very good, quick, & easy. We just have it w/ a salad. It's part of our regular meal line up.

This is very similar to the Texas Caviar recipes but w/ avocado instead of black eyed peas. I'd take avocado over the peas any day! :)

Portobello Mushroom Stroganoff

Mmmmm!!! There aren't very many meat-free dishes that my husband gets excited about. But this one was a "keeper" from the first time I made it. The only change I make is adding salt, pepper, dried thyme, and dried oregano to the mushrooms when I saute them. The fresh parsley is a must for this dish.
