Shoyu Chicken

This is super good. I actually make this about every other week. We like spicy and so for us adding the optional spices give it the perfect hint of heat. I make the sauce as described, except I never add the oregano and I use ground ginger (instead of fresh) and green onion (instead of a normal onion), and will marinate 4 large chicken breast in the sauce for 12-24hrs. I put the chicken breasts on the grill and then boil down the left over sauce on the stove with 1 tbsp cornstarch to thicken it up. Then when its time to flip the chicken over, I will brush the top with the nice thick sauce. Cook a little longer and then flip one more time and brush that side with the thick sauce. Then I add a pinapple ring on top. and cook until done. Super yummy! We serve with white rice.

I love this! My mom used to make this same thing when I was a kid, but she used ground beef not corned beef. Very yummy.

Cajun Dirty Rice

If you like cajun, you will love this! I made a few adjustments tho because I was actually looking for a red beans and rice recipe. I did not add ground beef, used yellow rice mix instead of dirty rice mix, and added bell and hot peppers. For the sausage I used andouille sausage (so good!!!!!). I also added a little bit of creole seasoning to taste.

Slow Cooker Chicken Cordon Bleu

This was just ok, it kind of ended up looking like slop but still had a good flavor. I used the Cream of Chicken with Herbs soup and Stove Top Stuffing. Like some people suggested I cooked the chicken in the soup and layered the ham. Then for the last hour I added the cheese and the stuffing. I liked how the chicken was cooked in the soup and when you add the stuffing it soaks up the soup and gives it a great flavor. I like to use the crockpot because I work 8-10hr days and do not want to cook when I get home, unfortunately this meal cooks quick and isn't really for "slowcooking". You can make a better Chicken Cordon Bleu on the stove or in the oven and just serve it with a side of stuffing so I don't think I will make this again. If I were to make it again I would omit the cheese and cut the ham into bite size pieces.

Zucchini Bread IV

I was looking for a recipe to use all the zucchini my garden keeps insanely producing. This was my first time making Zucchini Bread and this recipe is so good and really easy to make!! I added the Crumb topping as suggested but I thought it was too sweet, so next time I will not add the topping. I also omitted the walnuts (I didn't have any) but I think it would taste super good with walnuts, so I am adding those next time. I used my new kitchen aid (I was excited) and followed the directions as stated. Overall the bread was moist, tasted perfect and cooked in exactly 1hr. I'm making it again this weekend, out garden is full of zucchini!

Slow Cooker Chicken and Dumplings

This is very very good! Better than any other Chicken and Dumplings I have ever had!!! I added a cup of sliced carrots, a cup sliced of celery and one can of corn, drained. Added one can of the bisuits 90 mins before it was done. Cooked perfectly. I would definitely recommend!

Bruschetta 'n Cheese Stuffed-Chicken Breasts

This is the best easy to make food I have ever made. Didn't change a think except used thin sliced chicken breast for easy and used diced tomatoes with roasted garlic in rich juices since I couldn't find the olive oil kind. Served next to whole grain pasta with red sauce. yummy!

Fish in Foil

This was pretty good!! I didn't use trout, I used halibut since it's my husbands favorite. He loved the lemon and jalapeno taste this recipe gives; however, I think it was lacking a little in flavor and next time I will sqeeze more lemon juice onto each filet or use a lemon pepper seasoning. We also didn't cook it in the oven and instead we used the grill outside. Each fish steak was grilled in it's own pouch with sweet peppers and zuchinni. Served with white rice. Yummy!

Slow Cooker Buffalo Chicken Sandwiches

This was amazing!!! Definitely one of my favorites. I am a sucker for Charlies buffalo chicken sandwhich, so when I saw this recipe I was very excited to try it. I too used Franks wing sauce. I added 1 12oz bottle Franks wing sauce, 1 package hidden valley dry ranch mix into the crockpot and mixed. I then added 6 frozen chicken breasts. Cooked on high for 2 hours and turned the chicken breasts over. Cooked on low for another 4 hours. When the chicken was done I removed the chicken from the liquid and shredded with the 2 tbsp of butter. I then added the desired amount of sauce left over in the pot to the shredded chicken. Served on a hamburger bun with swiss cheese and ranch dressing. It would have been yummy with lettuce and tomato too.

Trinidad Stewed Chicken

This was soooo good! I followed the recipe almost exactly but used chicken broth instead of water and added hot peppers when I browned the chicken. My husband (who is very picky) really liked it. So delish!!!!

Best Spanish Rice

Pretty good for how easy this is. 2 cups chicken broth was not enough to fully cook the rice. Next time I will just cook the rice as directed on the package using chicken broth. I added a full jar of salsa, but I think it was too much and 1 cup is plenty. I also used "Medium" salsa and thought it made the rice way to spice, so I will definitely good with mild next time. I will for sure make this again. This rice is way better than any kind you can buy in a box at the store.

Enchiladas Suizas

This is the BEST thing I have ever made! My husband liked it!! And that is saying a lot because he doesn't like anything if I didn't come from a restaurant! Ladygwyn, I love you! lol! I made the salsa verde and poured it over 4 chicken breasts in the crockpot, cooked on high for 5ish hours. Removed chicken and shredded. Transfered remaining salsa to pot and boiled down with about 1tbsp of corn starch until it was thicker. I also more cumin then called for, used about 1/2 tsp. This was delish. Frying the tortillas made them nice and crunchy and not soggy at all. I only used about 1/2 cup crea that I mixed with 3/4 cup salsa verde. PERFECT recipe. Will definitely make again!!!!!!

Braised Balsamic Chicken

I really enjoyed this dish and I am always looking for a low calorie meal so this was great for me; however, my husband did not like the balsamic taste. I added mushrooms to this dish and served with a side of mashed potatoes and garlic bread, super yummy! I followed others suggestions and diluted the balsamic in chicken broth (1/4 cup balsamic:1/4 cup chicken broth, and added a tablespoon of brown sugar. I think 1/2 cup of balsamic would be a little too overpowering. I also mixed all the ingredients for the sauce in a separate bowl before pouring it onto the chicken. I only added a small dash of rosemary and used fresh oregno and removed before serving. My only complaint was that the sauce was very thin.

Summer Chicken Burgers

Really good. I also didn't make the avacado spread and instead layered the avacado on top like it is in the picture. I squeezed lemon juice on to the chicken right before I added the cheese. I didn't use mayo and instead used mustard.

These were super yummy!! I followed the recipe almost exactly. I used frozen bread rolls instead of bread loaves. Dough was sticky but after using flour it was much easier. I noticed it was easier to stuff with meat and cheese if I stretched and worked the dough a bit like I was making a little mini-pizza. It wasn't hard once you got the hang of it. I may have made mine a little larger than normal using 2 rolls per runza and I ended up with 12 at the end.

Easy Slow Cooker French Dip

I was so disappointed in this recipe after it got such great reviews. I love French Dips but this recipe was just ok. But the left overs the next day were wonderful. My meat seemed overcooked and dry, the meat didn't slice instead it just fell apart. I used Coors Lite because thats what I had, next time I will try a darker beer. The sauce was oily and lacked flavor. I ended up transfering the sauce to a pan and boiled it down a bit, and added a cube of chicken boulion because that was all I had. Overall this was ok. I added a slice of swiss cheese, which was great. I think I will give the recipe another try though and cook the meat less. Next time I will use a darker beer, cook less and some spices. It was way better reheated.

Chicken Cordon Bleu I

Super good and easy to make! I loved it, my husband didn't but he doesn't like anything. I used thin sliced foster farms chicken breast, so I didn't have to pound and it was easy to roll. I didn't have seasoned bread crumbs so I just seasoned my own with dried parsley, paprika, salt and pepper. I served with stuffing and corn. I made the sauce everyone recommended, but I didn't like the flavor so I just served with a side of mustard (honey mustard would be good too). Overall delicious recipe and I will definately make it again.
