Zucchini Jelly

WAY too much sugar. I reduced the sugar to 3 cups and used sugar-free jello trying orange,strawberry or raspberry. It set up beautifully with NO need for pectin. One pint even sealed without hot-water bathing. (I planned on trying it the next morning so I just left it on the counter overnight and in the morning it was sealed.) I would call it marmalade, though. I put orange zest in one batch and it was wonderful. A bigger can of crushed pineapple didn't hurt anything. I probably cooked it for about an hour. Highly recommend!

Maui Banana Cream Tube Cake

This is super delicious served warm! I only had a 4 oz. container of honey vanilla Greek yogurt so I used that and added 4 oz. of low-fat sour cream and it was fabulous. Made the mistake of taking it out of the oven about a half hour before dinner and we couldn't stop eating it. Definitely a keeper and a sharer!

Grandma's Applesauce Meatballs

Realizing I had a lot of ground chuck in my freezer that needed to be used, I started looking for meatball recipes. This looked good and boy, was it! I used garlic and cheddar seasoned crotons and left out both of the other cheeses as my husband is not a big cheese fan. Never missed them but I'm sure they would not have hurt anything. Used one can of cream of celery and one of cream of potato and 1% milk (added 1 T. of flour) for the sauce because that's what I had. Very tasty sauce over either mashed potatoes or noodles and served with steamed asparagus. Definitely a keeper!

Hearty Whole Grain Muffins

Takes quite a bit of assembling if you don't have all the healthy grains but well worth it. My New Year's resolution was to exercise more and aim for a healthier diet. Went out and bought toasted wheat germ, wheat bran and bran cereal. These muffins were DELICIOUS! Normally, bran muffins can be so dry but not these. Make sure you cool them somewhat before trying to take the papers off, they are a little sticky.

Tasty Baked Meatballs

Made one substitution; cream of celery soup instead of mushroom. My husband is convinced every mushroom is poisonous! (Made mushroom gravy for myself while he enjoyed cream style corn on his mashed potatoes.) Next time will use a little Worcestershire and garlic salt and be sure not to overcook. Maybe ground chuck is too lean; will try with hamburger next time. Still, very tasty. Wondering about freezing: Do you cook first? Do you freeze in gravy? Do you reheat in microwave? Do the meatballs dry out much more?

Slow-Cooker Corned Beef and Cabbage

You can start this on high for an hour or so but definitely finish on low 8-10 hours. I buy nylon "footies" (like 10 pairs for $2) and put the spices in one and tie it off. Put this in with the meat and you won't have pieces of spices to pick out of your teeth afterward.

Beer Butt Rosemary Chicken

When taking the chicken out of the oven, be VERY careful not to let the chicken tip over: Huge mess! I don't know why the one "expert cook" was so harsh. I find chicken done this way very moist and tasty. I bought my "ChickCAN Rack" at Home Depot. ($2.98) Good investment!
