Pasta Lasagna

Yumm! I made a couple easy changes based on what I had on hand. I substituted a package of Trader Joe's frozen mushrooms with garlic for the ground beef, and cottage cheese for the ricotta. It took approximately 30 minutes to bake. It was amazing, and we will definitely make it again (with the changes)!

BLT Salad

The flavor of this salad was great. It is high in fat, but we didn't need to use nearly the amount of dressing recommended (we maybe used half). We made this about 10 minutes before we served it, and it was starting to get a little soggy by the time we ate, so I'd say to mix the dressing right before serving.

Cherry Cobbler I

We loved this recipe (our first cobbler). We used Rainer cherries, and cut the sugar to half in the pour over mixture (since they were not sour cherries) and the water to 3/4 of the recommended. Other than that, did not change a thing and it was wonderful!

Roasted Garlic Cauliflower

Amazing - 10 stars! I used a bag of frozen cauliflower (just put into the oven frozen), drizzled the olive oil on top and baked at 400 for 20 min, adding the Parmesan cheese for the last couple minutes. It was perfect! Next time I will use two bags if I do frozen (as it definitely didn't make enough for our family with one bag :).

Cantaloupe Berry Smoothie

Amazing! The fruit we used was cantelope, blueberries and frozen raspberries and we also added some ground up oatmeal. Definitely double the recipe if you're serving to more than one person, as it doesn't make very much. So good though (even though we didn't make exactly as directed). Will definitely make again :)

Strawberry Oatmeal Breakfast Smoothie

The taste on this was great!! I had fresh strawberries, so I made sure to use a frozen banana. I ran the oats through the food processor first, but they were still noticeable in the texture of the smoothie. That being said, I will definitely make this one again! My whole family (me, hubby, 1 year old and 3 year old) all enjoyed the flavor (and it feels so fresh and healthy :).

Easy Pizza Sauce I

True Cheeseburger Pizza

We loved this!!! We followed the directions exactly, except we added bacon as well. The only thing we would change is to split up the cheese and put part under the meat/onion combo and part on top. Will definitely make often!

Tuna Noodle Casserole from Scratch

Yumm! I loved that this didn't have cream of mushroom soup in it, as I can't have dairy. Followed the recipe, but used 1 1/2 C rice milk and omitted the cheese. The flavor was a little bland, so I added a garlic salt to taste and sprinkled dill on top. Baked in a 9x13 pan. Will definitely be adding this to our routine dinner plans!

Banana Crumb Muffins

Amazing...this recipe deserves all of the 5 stars it's gotten. The only change we made was to exchange the butter in the muffins with 1/2 canola oil, 1/2 applesauce, as we needed some to be dairy free (topping free). Everything else we left the same. Will DEFINITELY make again!!

Amazingly Easy Irish Soda Bread

This was our first time making irish soda bread. We halved the recipe and added chocolate chips to our loaf. We also accidentally cooked it at 400 (oops) for 30 minutes, but luckily it still turned out good...crusty on the outside, soft on the inside. Will definitely make again, but next time will cook at 375 :).

Zesty Slow Cooker Chicken Barbecue

Excellent! We used fresh chicken and halved the sauce for 3 chicken breasts. It was done after 5 hours on low, and had excellent flavor. Will make again!

Banana Muffins II

So good! I also added 1t cinnamon, 1t vanilla and 1/4t nutmeg. We made mini muffins (made 24 of them) and they were done in 10 minutes. We all loved them...even my picky toddler, who ate 3 of them.

Quinoa Black Bean Burgers

Wow! This was really good (and easy too). My husband is very skeptical of "healthy" vegetarian food, but after making it even he said that we need to make it more often. I also agree with others that this is very forgiving...we didn't have any bell peppers, so we left them out, we also used a little more onion, bread crumbs and franks than the recipe called for. Would definitely recommend trying these!

Pineapple Chicken Tenders

SOOOO good!!! We made the marinade, mixed half with the chicken (a little over a lb) and reserved the other half. We cooked the chicken on the grill and with the left over marinade we made a sauce by boiling with a little cornstarch slurry and 3 chopped garlic cloves. We served the chicken over white rice and pineapple chunks with the sauce on top. It was amazing and we will make again!!
