Six Can Chicken Tortilla Soup

Quick, easy, and tastes good. I prefer to use fresh chicken and frozen corn. I added cut up corn tortillas too.

Sherry Apple Pork Chops

This was FANTASTIC!! I doubled the brown sugar, cinnamon, and butter, but left everything else the same. I added some cornstarch to a bit of sherry and mixed it into the hot juices after the dish had cooked. It was truly divine!

English Muffin Bread

I cut this recipe in half, except I still put in 1 tablespoon of sugar, added 2 tablespoons of cornbread mix in place of cornmeal, and put it in my bread machine. It made a 1 1/2 pound loaf. It was FANTASTIC!!

German Apple Pudding Cake

I wanted to use up some left over Granny smiths and thought this recipe sounded good. We had it for dessert tonight and it's almost been eaten already! I did not even make the topping, but it was still wonderful. Simple, light, and not too sweet.

New England Clam Chowder I

Having just returned from New England, I hoped this recipe was close to the clam chowder I had eaten while there, but it wasn't. It was too thin and tasted too much like bacon. :-(

Awesome Carrot Cake with Cream Cheese Frosting

This recipe is rated high by everyone so I keep wondering what I did wrong. I followed the recipe but the cake took forever to bake and then tasted very bland...other than the cream cheese frosting.. when it was done. I have been cooking for years so it's not a lack of cooking skills at fault. Sorry!:-(

Key Lime Pie VIII

This was very delicious! I used one cup of real whipping cream instead of the whipped topping in orer to cut back on the sugar. I only put in 1/2 cup of lime juice too. It was a nice refreshing treat for my hubby who has been sick.
