Easy Granola Bars

I've become addicted to these. They are so flexible and so delicious. We add about 1/4 wheat germ and use non-fat sweetened condensed milk. I let the kids choose the flavor. Our favorite so far is dried cranberries, white chocolate chips, milk chocolate chunks and dried cherries. Yum!

Pan de Muertos (Mexican Bread of the Dead)

So much easier than I expected. I followed the directions and shaped the loaf into a skull. The orange glaze gave it a great look, really beautiful the way the skull seemed to glow. And it tasted great, too! Thanks so much!

Chewy Chocolate Chip Oatmeal Cookies

Delicious! I was forced to make some odd substitutions but these cookies still turned out great! I didn’t have enough butter on hand so I used butter-flavored Crisco instead. (I added 6 tsp of water to the Crisco before I creamed it with the sugars.) I also discovered I didn’t have enough oatmeal so I used about 1 and a half cups of regular oatmeal and then I emptied 2 packs of instant apple-cinnamon breakfast oatmeal into a colander, shook out the apple-cinnamon flavoring, and added that oatmeal (along with its dried apples) to the mix. I was pretty sure the cookies were going to be mediocre at best, but WOW. They really turned out great. I will make these again and again. I will probably keep the Crisco in place of the butter, but I will double check my supply of oatmeal before I start baking next time

Raspberry Lemon Muffins

Excellent as is and can easily be adapted. Today I made them with strawberry yogurt, blueberries, and no lemon zest. Have used vanilla, bosenberry, and lemon yogurts in the past. Easy to just throw in any yogurt and frozen fruits you have on hand. Also great with a lemon glaze. (Try 1 T of lemon juice mixed with 1/2 cup of powered sugar.) Makes great mini muffins, too. I make 24 mini muffins and cut baking time to 12 minutes.

Lemon Bread

Chili con Carne II

Wonderful! Tastes just like the chili served at community chili dinners when I was a child in south Texas. My Yankee husband thought it was nuts that we served chili over rice; now he loves it! I added jalapenos and used ground cloves in place of whole cloves. Thanks so much for a great recipe.

West Texas-Style Buffalo Chili

I used canned beans, which reduced the cooking time significantly. This is a very yummy and very easy chili recipe. Make sure you have sour cream on hand!

Pear Bread II

I substituted all of the oil for 1 cup of unsweetened applesauce and it was FANTASTIC. This bread is moist and tasty.
