Baked Mushroom Thighs

Reviewed: Jan. 27, 2003
This recipe is simple and delicious. To the mushroom soup, I added garlic powder along with the onion powder. I also added some Mrs. Dash because I didn't have any dried parsley. I seasoned the bread crumbs with salt and pepper, and still didn't find the end product too salty. I decided not to make the sauce, because I don't like the thought of eating a sauce that I previously used to dip raw chicken pieces in...even if I am going to boil it! All in all, my family loved this and I'll add this to my rotation. Thanks Doris.

Spaghetti With Peanut Butter Sauce

Reviewed: Jan. 27, 2003
I used this as a sort of template to build on. I used extra garlic and soy sauce, used a thai chili paste in place of the chili sauce and also added a few drops of thai fish sauce. When I added the peanut mixture to the spaghetti, I found the taste to be too sticky, so I then added some chicken broth to thin it a bit...then voila I had a perfect pasta dish!

Eggnog Quick Bread

Reviewed: Jan. 25, 2003
What a great way to use up left over egg nog. This bread is delicious! I increased the amount of rum extract to 1 tbsp, and used 1 tsp of nutmeg. This gave the loaf more flavour, and tasted even more like egg nog. Thanks Bev for a recipe I will no doubt use often.

Indian Tomato Chicken

Reviewed: Jan. 22, 2003
I braised this in the oven for the afternoon. A unigue and flavourful twist for cheap old chicken thighs. In the future I'll use a combination of boneless skinless thighs and boneless skinless breasts. I found that I had to drain a lot of fat using just regular thighs. Also, make sure your spices are fresh and aromatic...it makes a big difference in the final product. Overall, a satisfying meal.

Creamy Rice Pudding

Reviewed: Jan. 22, 2003
Divine! I have always LOVED rice pudding, but my attempts to make rice pudding in the oven have consistantly been flops! This stove top recipe is to die for. So creamy, and not grainy at all. The only thing I'd change is to add less raisins (personal preference) I found that because they are added to the hot liquid they plump up quite a bit, giving the pudding that extra sweetnes that it doesn't really need. Hats off to Erica for a sensational recipe...now I must go and enjoy another bowl!!

A simple great tasting loaf. I added vanilla, pecans and cinnamon to mine for a little more flavour.

Chili Cheese Dog Pot Pie

Reviewed: Jan. 22, 2003
I had some of my chili left over from a previous night and needed a new recipe to use the left overs. This is indeed simple, and delicious. I didn't have any bisquick so I used the "Easy Biscuit Mixture" recipe off this site. A nice change-Thanks Judi

I just love a recipe that helps me out in a pinch! I used this on top of the chili cheese dog casserole as a pastry and it worked fabulously. Thanks Janet!

Souvlaki

Very good. I added more lemon and more oregano, as I didn't have enough time to let it marinate for 3 hours. It turned out great.

Delicious and creamy. I used quick oats and it still turned out great! The taste was similar to rice pudding.

Excellent. I piped this into rosettes on a parchent lined baking sheet and stuck them in the freezer. Served them with plum pudding and a brown sugar sauce.

Brown Sugar Sauce

Reviewed: Jan. 1, 2003
A quick and simple sauce, with great results. I've made this twice over the holidays, always producing a smooth, great tasting sauce. My only suggestion would be to reduce the amount of brandy a bit, as it is just a tad overpowering.

Brunch Enchiladas

I make this every Christmas morning for breakfast. It is a nice flavour change from your regular "run of the mill" bacon, eggs or pancakes. My family enjoys this with a dollop of sour cream, and salsa. Yummy

Yummy, satisfying, good ol' comfort food. I baked mine in individual ramekins, and these were very well received.

Aussie Chicken

Reviewed: Jan. 1, 2003
I fail to see what is so incredible about this recipe. I thought we were in for a taste sensation from all the spectacular reviews, but my husband and I both felt it was only mediocre. I followed the recipe to a tee, with so subsitutions, following suggestions from other reviewers about sauteing in the bacon fat and this dish still lacked flavour.

Sorry. Was really disappointed in this one. The flavours dont go well together. I served this as one of the many side dishes for my Christmas dinner, and this is the only one that came back untouched!
