Scottish Oat Scones

Reviewed: Apr. 10, 2003
Satisfying. I made these for our breakfast this morning, and they turned out perfect. I used quick oats instead of the bigger rolled oats without any brpblems. I did have to cook them longer than specified in order for them not to be doughy. I served these with butter that I mixed with cinnamon and brown sugar. Delicious and very filling.

Apple Dumplings II

Reviewed: Apr. 7, 2003
Very yummy! I used some pastry that I had made previously and frozen. The sauce is delicious. This tastes heavenly with some whipped cream! Great comfort food.

Broccoli With Lemon Almond Butter

Reviewed: Apr. 7, 2003
Such Great Flavour! Our little family really enjoyed this. I didn't have a fresh lemon on hand,so I used bottled lemon juice and decreased the amount to 1 1/4 tbsp, because bottled is much more tart then fresh. I'm so thrilled to have a new way to prepare broccoli!! Thanks Sue.

Gourmet Tuna Salad

Reviewed: Apr. 3, 2003
Yummy. These are some very nice additions to your regular "run of the mill" tuna salad. I thoroughly enjoyed this in my sandwhich at lunch today.

Curry Chicken Salad

Reviewed: Apr. 3, 2003
Made this yesterday for lunch, and though it is simple, it is delicious! In addition to the ingredients listed, I added a bit of lemon juice and also a bit of dijon mustard. Very tasty!

Best Tuna Casserole

Reviewed: Apr. 3, 2003
Very Good! I usually just "wing it" when it comes to making tuna casserole, but there is a first time for everything, and I actually followed a recipe this time! As other reviewers stated, I too added some milk to make it more creamy. I then added about a 1/4 cup of miracle whip as well for a little zip, then I did my usual doctoring with onion and garlic powders. Instead of using potatoe chips on top I used crushed crackers that I pulsed a few times in the food processor with some melted garlic butter. The end reult was a very yummy tuna casserole.

Stuffed Potatoes

Reviewed: Apr. 1, 2003
I didn't have any onion dip so I added sour cream and green onions instead. Then of course butter, and lots of shredded chedder. I piped the mixture back into the skins then sprinkled a bit of paprika over each one. Beautiful and delicious!

Mexican Rice

Reviewed: Mar. 30, 2003
Simple and flavourful rice dish. Instead of tomatoe sauce, I used pureed salsa, which gave this dish a really nice flavour. I didn't have any saffron, so I used tumeric. This went really well with my mexican themed lunch today!

Shredded Beef for Tacos

Reviewed: Mar. 30, 2003
As I sit here writing this review, the smell of this recipe cooking in the oven is making me drool!! I've had the roast in the oven all night at 225 degrees, and this morning when I got up the meat was almost falling apart. I shredded it and returned it to the juices to let it sook for a few more hours while we're at church. When putting this together I couldn't find any Mexican style tomatoe sauce in my grocery store, so I took 16 oz of salsa and pureed it. I also didn't have any white wine so instead I used apple juice. I then poured in some home made taco seasoning (from this site), some onion powder, cumin and franks hot sauce. At lunch time I'm doing to serve this with tortillas, lettuce, tomatoes, cheese and guacamole. I can hardly wait. Diana, I will use this often!!

Butter Cream Frosting II

Reviewed: Mar. 29, 2003
I have been using this recipe for months now on many many cakes, and I love the results. I've noticed that many reviewers complained about it being too greasy, something that I havn't noticed at all. Infact I like this recipe because it cuts the strong butter taste I notice in so many other buttercream frostings. I love this one, and will continue to use it. Infact my brothers 25th is tomorrow and I'm off to ice his cake using this recipe! Thanks Kris!

Garlic Croutons

Reviewed: Mar. 29, 2003
Like all the rest, there's absolutely no need to buy croutons when you have this recipe ( Nor will you want too!!) I increased the amount of bread and butter and instead of fresh garlic I used garlic powder. As well, I added about a tsp of parmesan cheese to the butter mixture. Delish! These make an ordinary green salad exciting again! My 4 year old wanted to eat just the croutons for supper!!

Amish Bread

Reviewed: Mar. 29, 2003
This bread has a really nice flavor! All my usual bread machine recipes call for butter, and since I had none left, I needed a recipe for bread that used oil. This bread has a really nice soft texture. I put mine on the dough cycle, so I could take it out and make dinner rolls. I wouldn't recommend doing this though, because the dough is very sticky, and I ended up adding a lot more flour to make it manageable. In the end though, after the extra kneeding, I had a dozen very delicious rolls! I'm going to try this again today, and let it stay in the machine to bake. Thanks Sherry Ann, for a good recipe.

A-Number-1 Banana Cake

Reviewed: Mar. 28, 2003
Scrumptious Cake! Bakes up beautifully golden brown. I baked mine in a 9x13 pan and it took 35 minutes until done. I made Banana Butter Icing from this site to ice it with. Simply put, you can't go wrong with this cake! Thanks Kevin.

Greek Style Potatoes

Reviewed: Mar. 26, 2003
We LOVE Greek food in our house, and ever so often I get the craving for Greek potatoes. Sad to say, these aren't exactly what my taste buds were missing. These were WAY too lemony, and sour!!! If I make these again I'll cut back on the lemon juice, and perhaps add more bouillion or chicken stock. Also, don't forget to add oregano. (Sigh) Oh how I miss not being close to a good Greek restaurant!

Jay's Signature Pizza Crust

Reviewed: Mar. 17, 2003
Impressive! We liked how the crust (when baked) resembled a pizzaria crust! Once I had assembled all my toppongs on the pizza dough, I brushed the outside crust with some butter that I mixed a little garlic powder into. Now all I need is a pizza stone to have absolutely perfect results. Thanks Jason for a crust I will definately use again!

Marinade for Steak II

Reviewed: Mar. 17, 2003
I thought this was just all right. It's the only marinade recipe I could find that I had all the ingredients for. I'm not too keen on molasses, and I found the molasses flavour to be very strong, the powdered ginger measurement could also be reduced. Molasses is also a little tricky when grilling because it burns very quickly. Not sure if I'll use this one again.

J.P.'s Big Daddy Biscuits

Reviewed: Mar. 14, 2003
What HUGE tasty biscuits these are! I pulsed the dry ingredients and shortening in my food processor, then transferred to a bowl and added the full cup of milk (next time I will only use 3/4 cup) mixed it together, put it on a lightly floured counter and kneeded it about 6 turns (something I have NEVER done with biscuits because it usually makes them tough!) I then put the dough back in the bowl, covered it and put it in the fridge for 2 hours. I got six large biscuits out of this recipe, that rose higher than any biscuit of mine has ever risen!!! I was astonished when I opened the oven door!! Thanks JP for a biscuit recipe I will use many times over!

Bread Machine Challah I

Reviewed: Mar. 10, 2003
I've loved Challah ever since I worked for a Jewish family a few years ago and was introduced to this wonderful bread. I now live in a rural Nova Scotia town, and Challah bread isn't something one would usually come accross. Anyway, now I can make this in my bread machine, and I am delighted with the results!! I too did as another reviewer and set my machine to the dough cycle, so I could take the dough out, braid it, and bake it in a conventional oven. Once braided, brush the bread with a beaten egg,and sprinkle with poppy or sesame seeds. This is beautiful, great tasting Challah. Thanks Suzy for a wonderful recipe.
