Tandoori Chicken II

As written, this recipe isn't that great. Instead of water, I mixed the spices with oil ad lemon juice and marinated chicken breasts in the mixture for the afternoon. To cook them I seared them in a frying pan then finished them offf in the oven with the rest of the marinade poured over top. In the end ths was much tastier than I expected.

Poor Man's Caviar

As written, this recipe is a bit bland. I improved the flavour by adding lime juice, chopped cilantro, minced garlic and sea salt. Much, much better after those additions.

This was pretty tasty. I only used 1 pound of each of the meats, and kept the flavouring amounts the same, and it turned out quite well. I do recommend you keep your grill on low and the cover closed for the first little while when you're cooking these, and don't try moving them too much to begin with, or they'll fall apart. I served these with Tzatziki sauce, a greek salad and fresh warm baguette. A very yummy dinner. Thanks!

Crustless Spinach Quiche

Delicious and so easy!! I used a mixture of cheddar, mozza and monteray jack in my quiche which gave it a really nice cheesy flavour. I also made this the night before, and popped it in the oven the next morning. Worked perfectly.

Bunjal Chicken

Pretty tasty! I think the instructions are a little off on the method however. The last part says to cook the chicken in the sauce for 5 minutes. This is no where near long enough, and needs at least another 1/2 hour. In the end this was a pretty tasty way to prepare chicken.

Spicy Pork Stir-Fry

It's not very often that I give such a low rating, but this was terrible!! I think the name should be changed to Lime Pork Stirfry, as this was the predominate flavour in the dish. Sorry:(

Hungarian Goulash I

I made a few minor changes. I used beef stock in place of the water, upped to garlic to 4 cloves, added about a 1/4 tsp of cayenne, and used a little flour and water to thicken it up a bit at the end of the cooking time. It was superb, and then it got even better as leftovers. YUM!

Roasted Garlic Mashed Potatoes

I served this with Prime Rib at Easter. My guests really enjoyed these kicked up potatoes. I added a little dried oregano and chopped parsley for more color though.

Lemon Icebox Pie III

Sinful!! I loved the ease of preparing this. For a slight variation I added some powdered ginger to my graham crust. It really complimented the lemon flavour, and the whole pie disappeared in record time from my Easter table!

Brown Rice Bread

I set my machine to the dough cycle, and then kneeded the dough in some extra flour until it was smooth. I formed a loaf and set it to rise in a bread pan, then baked at 350 degrees for 30-35 mintutes. This turned out beautifully, and I'll definately keep the recipe. Great way to use up leftover rice!

Mushroom Barley Bake
