So flavourful! I really enjoyed the pickled vegetables, and I didn't find it time consuming to do at all. I used my julienning peeler from Pampered Chef and was done in a snap! I added siracha chili paste to my sandwich, instead of using jalepenos, as I felt the siracha would complement the flavours better. I will definitely be making this again. A wonderful summer time meal.

Whole Wheat Bread III

Deliciously soft, sweet and ever so crunchy (thanks to the cornmeal addition). I used the dough setting on my machine and then made the dough into rolls. Very pleasing for 100% whole wheat! I'll be keeping this recipe for sure.

Brazilian Black Bean Stew

I was hoping for a taste sensation when I made this, but it needs a little work in the flavour department. I bumped up the salt, I added some more heat in the form of tabasco, and I also added some cumin. It is a very eye catching dish, but as written a little on the bland side.

Curry-Coconut Shrimp

This is a 5 star recipe with similar changes to another reviewer. I made a paste out of the onions, red pepper, garlic, ginger and oil, sauteed the paste, added the spices and a TBSP of flour and cooked for a few more minutes stirring to blend. Added the coconut milk and simmered it until slightly thickened and added a bit of salt for flavour. Added the shrimp and the cilantro, removed from heat once the shrimp was cooked through and served it with brown rice linquine. Absolutely superb!! My hubby was a happy man.

Simple Scones

Wonderful! I was in a rush, so I didn't have time to freeze and grate my butter. I did it the old fashioned way and cut it in with a pastry blender. They turned out perfectly! Some of the best I've ever tasted

Light Oat Bread

I used my bread machine to make the dough, then used my oven to bake it. Not much else to add to the other reviews...this is excellent bread, that I will most certainly make again!!

Great recipe...and an excellent way to slip a bit more fibre into the kids diet in the morning! Definitely beats the flavour of everyday boring white waffles.

Sicilian Meat Roll

This looked like it might be a challenge to put together, but it turned out to be so quick and easy! I used Canadian bacon instead of ham, upped the garlic and added onion powder to the meat mixture as well. This was a real hit. Next time I may even add some sauteed spinach, mushrooms and roasted red peppers to the filling.

Spicy African Yam Soup

This was a nice change! I added red peppers to the mix for some added color. Next time I make this I think I'll omit the rice, and serve it on the side, kind of like an African jambalaya!

Tasty Lentil Tacos

Great recipe! In my quest to put a few meatless meals on my table throughout the week, these lentils have become a hit, and noone seems to miss the regular taco meat when I substitute this in its place in my taco salad. Tasty and healthy!!

Bread Machine Rolls

I used this recipe to make hamburger rolls. I rolled the dough out and cut them with a large round cookie cutter, let them rise, than used the egg wash and a sprinkling of sesame seeds and poppy seeds for each roll. Baked for 20 minutes and voila, perfect hamburger buns! Great recipe, will use again.

Lemon Curd

Deliciously lemony! I cooked mine in the microwave stirring at one minute intervals until the curd coated the back of a spoon. Worked perfectly, and much easier and quicker than using the double boiler.

Apricot Cream Cheese Thumbprints

Instead of using apricot preserves I instead made some lemon curd and used that with fantastic results. So tender, moist, and absolutely delicious! I did cut the baking time down to 13 minutes as I found 15 to be a little too long.
