White Chip Chocolate Cookies

As with all of the recipes I review on this site, I made it exactly as written. They turned out great. I like a crispy cookie with a soft center. These do flatten quite a bit but I like my cookie like this, not fat and cakey soft. Good recipe!

Spinach Quiche with Chicken

This was a great recipe for using up some things I had, (chicken, spinach, eggs). I made it without the crust to save some carbs. Just mixed it all together and poured it all in my Pyrex pie plate sprayed with cooking spray. I added one additional egg and a mixture of cheeses and it turned out great!

Blueberry Loaf

Although I was tempted to add some grated lemon peel, I made it exactly as written and it turned out very good and very moist. Floured my blueberries and folded them in. I took it out of the oven a little too early and wished I would have kept it in for 60 min. (bottom was a little wet). Very easy and a beginner friendly recipe. Next time I will add some lemon peel for a little more flavor and a crumb topping. Standard loaf pan works just fine.

Maple Pecan Shortbread Squares

I made these just as written except I double it and used a 9 x 13 metal pan lined with parchment paper. Baked for 20 minutes as the recipe states. Turned out perfect and delicious. Be sure to spread out the pecans so they evenly cover the shortbread. Cut them in even squares, then cut them in half diagonally for a decadent look.

Chococonut Chip Cookies

They were good but I hard a hard time making them consistent. They seemed to brown up really fast. I followed the recipe except I used 1/2 tsp vanilla and 1/2 tsp coconut extract (since I had it on hand and thought it would kick up the flavor) It did! I would consider going with more coconut extract if I made them again.

Oatmeal Raisin Cookies I

I made these today exactly as written. If you like a flat/crisp cookie, than this one is for you. I like them, but my family likes a softer, chewier cookie. Good flavor and easy to make. I used a special "baking" raisin that is moister, so no soaking required as some members have suggested.

Cream Cheese Squares

These were excellent! I put a thin layer of raspberry jam on top of the bottom layer of dough. Like others suggested I used less sugar --3/4c. I also only used 1/4 c. melted butter. I am planning to make these for a wedding rehersal dinner they were so good!

Poblano Chile Enchiladas a la Gringa

Finally I have found an authentic Enchilada recipe with all the flavors that I remember from living in Oklahoma!! I followed the recipe exactly and it was delicious however, it was not quite the texture that I had wanted. It was crunchier and I wanted the rolled tortilla to be firm but not crunchy.(Just because that is the texture I remember). On my second attempt I fried the tortilla until soft then added some of the pepper sauce into the chicken before rolling. The sauce needs to be heated first to warm the chicken. I put the rolled enchiladas in a 9 x 13 baking pan then heated the sauce until it was hot. At this point I added more of the chicken stock to get the sauce to the desired consistancy. Then I poured the hot sauce over the enchilada's and topped with the cheese. Do not bake, that is the secret. Serve immediatly.
