Cranberry Pistachio Biscotti

Great biscotti recipe! I did have to bake it a little longer on the second round to get the crunchiness I was after, but otherwise followed the recipe pretty closely. I half-dipped them in white chocolate and dusted with red sugar to make it giftable. Love it!

Peanut Butter Banana Flax Seed Muffins

followed this recipe fairly closely, and it came out great!! i did change a few minor things: 1) omitted the dates because i didn't have any, 2) cut the sugar to 1/2C and did half brown/half white, and 3) cut the cook time to 25mins. can't wait to bring these into work! i might try to convert this recipe to bread to gift for the holidays...

Oatmeal Chocolate Chip Cookies I

I decided to follow the recipe the first time... and next time I think I will incorporate some of the suggestions. There weren't enough oats for my taste, next time it'll be 3 cups. I did cheat and add a tsp of vanilla, and glad that I did. The cookies were coming out a bit overdone on the outside and underdone on the inside at 9 minutes on 350F- after the first pan, I turned it down to 325F for 10-11mins and they came out much more even (but that could be my oven). I think some ground flax would be easily added, and minimally noticed. This recipe would also be great for other add-ins like dried cranberries, walnuts, butterscotch chips, or maybe some peanut butter!

Hot 'n' Spicy Buffalo Chicken Salad

i mostly used this recipe as a guide for how to make the chicken. we used diced celery and carrots, blue cheese crumbles, and regular blue cheese dressing over chopped romaine hearts. great, filling salad! we served it with whole wheat rolls, but i like the idea of serving it in a wrap too. that's next time! i think i will add tomatoes as well.

Fluffy Pancakes

great basic pancake recipe! i didn't have white vinegar, so i used cider vinegar instead and it came out perfectly. i think i will add some vanilla and maybe some cinnamon next time for a little flavor boost.

Beef Enchiladas II

great base recipe! i used veggie crumbles instead of beef to make it vegetarian-friendly and added some taco seasoning to the mix. served it with homemade black beans and rice... perfect!

Shepherd's Pie VI

good base recipe (hence the 4 not 5 stars)! made some of my own tweaks and got great reviews... added a few splashes of worcestershire sauce to the meat before cooking, used 1C of broth make more gravy, added frozen peas above the meat to up the veggie factor, and added a couple shakes of cayenne pepper to the meat for a little kick. great for a group!

Chewy Peanut Butter Cookies

loved this recipe! i followed some other reviews and added vanilla and a pinch of salt, and used a heavy hand with the peanut butter. i didn't have any eggs so i substituted ground flax with water (1Tbs flax +3Tbs water=1 egg). i also made a couple of "classic" modifications: topped with sugar and "x-ed" with fork marks before baking, or baked without sugar and topped with a hershey kiss upon removal from the oven. both were a hit with my fellow football fans!

Flatlander Chili

awesome chili recipe! i don't care for cooked peppers, so left that out and added some diced tomatoes. also, i didn't have time stand at the stove... so i browned the meat first then cooked the whole thing in the crockpot on low for ~6hrs. topped with canned jalapenos, cheddar, and sour cream and served with corn bread. so good!!

Snickerdoodles III

first run... not too bad. surprisingly enough, the sugar cookie part was not as sweet as i would like so i might add more sugar next time. and i kind of eye-balled the cinnamon-sugar coating to my taste. the first pan came out a bit too ball-shaped and not enough cookie-shaped, so i flattened the rest before baking and was happier with the look. good base recipe for snickerdoodles!

Banana Bread

love this recipe! originally tried it because i was out of eggs... and kept on making it even when i had them! i do make some changes based on personal preference: i use butter instead of crisco, add some vanilla and cinnamon, and use half white and half wheat flour. as muffins, they don't usually last more than a couple of days. and they are really easy to jazz up with chocolate chips, nuts, or a crumb topping. this is one for the recipe box.

Lemon Poppy Seed Muffins I

These came out great and were devoured at work. I did follow the other reviewers recommendations and increase the yogurt to about 1.5C and the oil by a splash as well as decreasing baking time to 16mins. They were nice and moist. I also increased the zest by a few shreds and added 1T lemon juice, but they still could have used a bit more lemon flavor. I will definitely make these again, maybe with double the zest and 2T lemon juice.

Lemon-Blueberry Oat Muffins

These came out great. An easy grab-and-go breakfast. I don't actually own anything to zest citrus, so I used the juice of half a lemon instead. Good berry citrus combo. I followed the other reviews and added a bit more sugar (just mounded the measuring cup instead of leveled), and it was the right amount of sweetness. I also added a few shakes of salt to the topping and it came out great. I might try this with other berries next time too, maybe some raspberries or blackberries...

Slow-Cooker Corned Beef and Cabbage

Everything was well cooked and yummy. My corned beef did not come with a spice packet so I added some garlic powder, cracked black pepper, and a bay leaf (nothing too precise, sorry!) Also, the cabbage didn't fit in the crock pot so I had to cook it separately (see "fabulous fried cabbage" recipe). Very good, I will use this again next St. Patty's day, or maybe sooner...

Fabulous Fried Cabbage

I couldn't fit my cabbage into the crock pot with the corned beef and potatoes... so I tried this recipe and it was great! I left out the butter and cooked it for only 30 minutes and it was perfectly savory and not soggy. My husband even ate it as leftovers, and he never eats leftovers!

Lemon Blueberry Bread

great bread! sort of cake-like, which totally works for me. i omitted the lemon zest and used the juice of 1 1/2 fresh lemons. i also followed the suggestion of other reviewers and used confectioners sugar for the glaze and added it with 5mins remaining in the oven. the bread was gone within 2hrs... definitely one for the recipe box!

Cauliflower and Broccoli Bake

i am forever trying to work new vegetables in to our meals, and this recipe did the trick for cauliflower! the sauce was perfect with the modifications suggested by other reviews (~1/2C less milk). i didn't have any english mustard, and the outcome didn't seem to suffer. i will definitely be making this again, maybe trying it with other veggies as well.

Banana Peanut Butter Bread

i brought this to work and it was gone in minutes! great snacking bread. i increased the PB to 3/4C and used 3 bananas per suggestions, which seemed to yield a great balance of peanut-to-banana flavor. i also added 1/2 bag of mini semi-sweet chocolate chips because i am a chocoholic. left out the walnuts. this is one for the recipe box!
