Italian Cream Cake II

This cake is AMAZING- but also huge. It should serve 12 people! My Dad calls this "the BEST cake in the world"- and he is probably right. It's so moist and flavorful, just make sure you replace the shortening and margarine with butter. Also toast 1/2 c. coconut to put on the outside of the cake with the 1/2 c. pecans. And for the frosting, I only used 2 c. powdered sugar.

Brooke's Best Bombshell Brownies

I was making this recipe for the umpteenth time, but I ran out of some ingredients so had to make some adjustments. I used only 3/4 cup cocoa powder and 2 1/2 cups sugar, and replaced 1 stick of butter with 1/2 cup unsweetened applesauce. They taste even better and no one can detect the applesauce. Before, I had trouble with the edges of the brownies becoming too hard after I cut them, but now they're perfect!

Red Velvet Cake I

It's actually funny; I have the same recipe except with 1 1/2 c. oil instead of 1/2 c. shortening. I know it seems like a ton, but it makes the moistest, lightest, most delicious cake out there! Also, it has 2 tsp. vinegar and a bit less food coloring. For cupcakes, bake only 15 minutes and they rise beautifully. Trust me, if you want to make red velvet cake make these changes!

Mini Cheesecakes

These came out excellent! I used a mock Oreo crust (I submitted the recipe, so look under my name) and filled 24 regular cupcake liners. I only baked them for 14 minutes (until the sides are firm, but the centers are still wobbly), so for mini muffin tins I would guess the baking time is too long!

Lower Fat Banana Bread I

I used half whole wheat flour, half brown sugar, and replaced the margarine with oil. I also added 1/4 c. toasted walnuts. Delicious! I only had 2 1/2 bananas, but it would probably been better with 3. It could have been because of this that I enjoyed Banana Bread I more and found it to be moister.

Banana Bread I

I replaced the butter with oil and added 1/2 tsp. baking powder and 1 tsp. vanilla. I also used half brown sugar and half white, and 1/2 c. whole wheat flour and the rest all-purpose. I baked it in a 9x5 pan for about 55 minutes and it came out perfect!

Divine Hard-Boiled Eggs

Bread Machine Rolls

These were excellent and easy! I used one cup of milk instead of the milk powder and water. I stuffed them all into one 9"x11" pan, and they expanded almost to the point that you couldn't tell one from another. Next time I'll give them more room to rise!

Chocolate Mint Dessert Brownies

I did not make the brownie part, but the filling and chocolate topping were excellent! Since I used an 8x8 pan, I halved everything. I took the advice of another reviewer and froze each layer for 2 minutes before putting it in the refrigerator. Make sure the mint layer is very cold before spreading the chocolate on!

Best Brownies

These were absolutely delicious. I didn't make the frosting, but used a mint layer topped with a chocolate coat. I used an 8x8 dark pan with greased parchment paper lining the bottom. For some reason, my brownies were done after 20 minutes- maybe because of the dark pan. These were very moist with a rich dark color! I do have to say, they were a bit rich for my family's taste.

Wow, this tastes amazing! I used butter instead of margarine and it turned out great. There is a lot of syrup at the bottom of the pan (it sinks during baking), so I'll probably make a bit less next time.

Fried Okra

Not exactly identical to restaurants' okra, but it tastes delicious. I used 3 eggs and a bit of milk for a pound of frozen okra. I coated the bottom of a cast-iron pan with oil and fried them in 3 batches. Serve them right away because they get cold quickly!

Banana Crumb Muffins

These are delicious! In the muffins, I used half whole wheat flour, 1/4 c. brown sugar, 1/2 c. white sugar, 1/2 tsp. cinnamon and 1/4 tsp. nutmeg. I replaced the butter with applesauce. I added chopped walnuts and an extra 1/8 tsp. cinnamon to the topping, which was more than enough for 12 muffins. Next time I think I'll take the advice of other reviewers and sprinkle the topping on after about 14 min. of baking so it remains more crumb-like and doesn't sink into the batter. Even after the "healthy" changes I made, the muffins are moist and some of the best I've ever tasted!

Delicious! I used all butter (no shortening) and only baked them for 9 minutes or so. For one batch, I took a reviewer's advice and baked them a minute longer after putting the kisses on, but I didn't notice a difference.

Whole Wheat Honey Bread

The bread was delicious, but unfortunately no one was there to remove the bread from the bread machine when it had finished baking. The whole loaf sunk into a dense block. It was still moist and had a great honey taste! I used oil instead of shortening and 1 Tbsp milk + 1 c. water + 1 Tbsp. water instead of the milk powder and water. The yeast was also a 2.25 tsp package, I think.

Gingerbread Cupcakes with Cream Cheese Frosting

These were so delicious! I added an extra 1/4 tsp each of ginger and cinnamon. I got nice domes because I used the oven trick- bake at 400 degrees for 5 minutes, turn the heat down to 350 and bake until ready. They were perfect with cream cheese frosting, but they were so moist they could be eaten plain!

Turkey Pot Pie I

This was a great recipe! I didn't use onion or parsley, but I threw in some frozen peas. I added potatoes with the rest of the vegetables except the peas (I mixed them in at the last possible moment). I used about 2 cups turkey and just one large potato. I brushed the crust with an egg wash before baking. I did taste the oregano a lot, so I would half the amount unless you're fond of it.

Chewy Chocolate Chip Oatmeal Cookies

The BEST oatmeal cookies I've ever tasted. I followed the advice from the reviews and added 1/4 c. flour and 1/2 tsp baking soda. I omitted the nuts and chocolate chips. The cooking time is about right; the cookies should come out of the oven when their centers still look raw and are only stable around the edges. Let them cool on the baking trays (I use parchment paper or silicone baking mats). These are so delicious and chewy- I promise! UPDATE: I tried Beth's Spicy Oatmeal Raisin Cookies, which were even better! They were the same recipe as my modifications to this one, except baked at a higher temperature so they wouldn't spread as much.

This yule log was decadent! The cake itself wasn't so sweet, but when frosted with chocolate butter cream, it became very rich. The cake part cracked when I unrolled it from the towel, but no one noticed after I filled and frosted it. I halved the whipped cream portion of the recipe, but I barely had enough. Next time I'll use 1 1/2 c. whipping cream. This was so delicious, and I'll definitely be making it again!
