Banana Banana Bread

This recipe produces a wonderfully moist banana bread. Its great with All Day Apple Butter (also from this site). Sometimes I'll add 1 cup of semi-sweet chocolate chips to the batter - YUM! Freezes well; I just slice it before freezing for ease when thawing.

All-Day Apple Butter

This turned out great. I used 4 red delicious applies and 4 granny smiths. I only used about 2.5 cups of sugar, and also added about a teaspoon of "pumpkin pie spice". I put it in the crockpot at about 8pm, cooked it on High for 2 hours, then Low overnight. In the morning, I took the lid off and cooked it for a few more hours until it was the right consistency (see notes on testing for doneness from other reviewers). This recipe gave me 4 half-pint jars of delicious apple butter.

Potluck Spareribs

These were great! I baked them at 300 degrees for 2 1/2 hours (per rib package), then slathered on the sauce and grilled them for 30 minutes. They were awesome! I didn't cut them apart until I was ready to throw them on the grill, and then I only cut them into manageable (4-5 rib) sections, so I could flip them on the grill. I don't like really sweet sauces so I cut the brown sugar to 1/2 cup and the honey to 1/4 cup. I also used apple cider vinegar instead of plain vinegar. My family couldn't get enough! Thanks!!

Croutons

SOOOO much better than store-bought. Instead of butter, I lightly brush my bread with light olive oil and sprinkle it with whatever sounds good (I try to stay away from the salts - garlic salt, onion salt, etc.) since we don't need the extra salt when they taste so good!

Bodacious Broccoli Salad

This is also great HEATED up! I only put about half of the dressing on it, but have both nuked it and baked it and it turned out YUMMY! (Nuke it covered if you like your broccoli softer.)

Early Morning Oven Roasted New Potatoes

Slow-Cooker Chicken Tortilla Soup

Delicious! I used all chicken broth, no water, hot enchilada sauce and petite diced tomatoes. I also just bought tortilla chips. Also topped it with sour cream, shredded pepper jack and more chopped cilantro. It was a big hit!

Spinach and Mushroom Casserole

I thought this was terrific with a few modifications. As others mentioned, less salt! Also, I just tossed the sliced mushrooms, spinach leaves and onion in a microwave steamer and steamed them all together with a couple Tbsp. of butter. I added a couple slices of cooked bacon, chopped, to the casserole and only used half of the cheese. It was very tasty and the family loved it!

Garlic Chicken

Very good and very easy. I always have the ingredients on-hand, so its a quick meal to prepare when nothing else has been planned. I always have the individually frozen chicken breasts from the local "warehouse store" in the freezer, so I can throw it all together when I get home from work. The only change I make is more garlic and a healthy dose of ground pepper. We will definitely make this again.

BBQ Pork for Sandwiches

Deeeeee-licious! I wanted something warm to come home to after an outdoor Christmas Eve service at church. This was perfect. I used a 4 lb. pork roast and cooked it in the crockpot for about 8 hours on Low with 16 oz. water mixed with dry onion soup mix and a diced onion. When we got home from church, I shredded the meat and stirred in some Jack Daniels BBQ sauce and a splash (or two) of Louisiana Hot Sauce. I didn't even have a chance to stick it in the oven. My husband and 4 teenage boys gobbled it up. I pulled out some store-bought mustard potato salad and coleslaw and I had a houseful of happy eaters. Thanks for the great recipe!

Buckeye Balls II

These were great! I used all 4 cups of sugar but added a 1/4 c. more peanut butter and they were perfect! I also used 8 oz. of Baker's semi-sweet squares, which was a perfect amount. My husband, a diehard Buckeye from Toledo LOVED them (so did I)! I will definitely be making these on January 8!

Peanut Butter Cup Cookies

These were really yummy. Just don't press the PB cup down too far into the dough or it will hit bottom and make it difficult to remove the cookies from the tins. Using this idea (and the suggestion of another reviewer), I used pre-packaged sugar cookie dough and pressed in a Hershey's cherry cordial Kiss in each one. Yummy!!
