Easy Swedish Pancakes

These were delicious, but I did add extra four after reading some reviews. I know they're supposed to be thin, so I decided to do more research. We are fans of Al Johnson's restaurant in Door County (northern Wisconsin). I looked up his recipe and it follows. I think I will try it next time: 2 eggs, 1 scant cup of milk, 2/3 c all-purpose flour, 2 t sugar 1/4 t salt 1 T oil or melted butter, 1/4 t nutmeg. In a small bowl, beat the eggs with a wire whisk. Mix in the flour and a little of the milk to make a paste, stirring until smooth. Add the rest of the milk and the remaining ingredients. Preheat a large non-stick skillet to medium-high heat. Pour about 1/4 cup of the batter into the skillet, and quickly tilt the pan to spread it into a thin circle. Bake it until the top surface appears dry. Flip the pancake and bake it for another 15 to 20 seconds, or until it is golden brown. The pancakes may be stacked and held in a warm oven until served. If a non-stick skillet is not used, it may be necessary to lightly oil the skillet between each pancake. Roll or fold each pancake and serve with lingonberries. The batter may be made an hour ahead or even the night before. The recipe makes 8 large pancakes, (two servings).

MMMMM... Brownies

Slow Cooker Ham

Rum Raisin Bread Pudding with Warm Vanilla Sauce

I have made these twice now and I just love bringing them to parties. They're quick and simple to make and they have so much flavor! I do add a bit more cinnamon. Don't over-bake or they'll be too dry.

Cranberry Streusel Pie

This was fabulous! I decreased the sugar to about 1/2 cup b/c I like the tangy taste and used butter instead of shortening. I took it over to my neighbors and they loved it too!

Chocolate Banana Bread Pudding

Yummy...tastes like banana bread. I used an extra banana and used part half/half and skim milk. I also added the chocolate chips on top and a sprinkle of nutmeg on top. I didn't use the full amount of sugar, but close. Fun recipe!

Cocktail Meatballs

I use recipe this for my homemade party meatballs. This recipe is quick and easy and is so much better than using the processed-tasting frozen meatballs! Instead of using the canned/bottled cranberries and chili sauce,I combine this with the Cranberry Sauce II (sal) and Chili Sauce (ELLENMEL) recipes on this site.

Sunday Morning Lemon Poppy Seed Pancakes

I followed the recipe to T. They smelled delicious while I was preparing them, but was disappointed that they weren't more lemon-y. I will add more zest and squeeze more juice next time. Very light and fluffy! Will try again!

Magic Cookie Bars from EAGLE BRAND®

I have loved these since I was a little kid making them. They're so easy! When I introduced them to my husband a few years ago, he couldn't believe how awesome they were. He volunteers to make them even though he's the chef, not the baker in our house. They're a hit everywhere we go! He had a brilliant idea of adding fresh chopped bing cherries once. That was delicious! We've mixed it up by adding dried cranberries or using different nut or chips. I can't say enough about this recipe. Very rich, so take little squares, if you can!

Chex® Lemon Buddies

I saw this on the back of the Rice Chex box and HAD to make it the next day for snack time. It was delicious and so easy for my girls to help. Gobble it all up or make 1/2 the recipe because it can get soggy quickly...or follow others' advice. This is another hit for chex!

Pumpkin Roll-Out Cookies

These had good flavor but needed far too much flour to roll and cut. It was very difficult to work with unless you chilled the dough every 15 minutes. The flavor didn't make the effort worth it for me.
